So what IS kombucha actually? It's fermented tea. The fermentation is facilitated by a SCOBY, whichfeeds of nutrients and sugar in the tea.

Good morning!! This Cairo trip messed with my schedule more than I realised and it proved a little harder to get back into the routine.

Still some consequences though: only VERY limited kombucha left and most likely the new batch not ready and bottled until Sunday next week (unless the heat continues to help and I could bottle a bit for Thursday).

Homemade pasta, layered between a mouthwatering bolognese sauce with organic no fat minced meat and freshly peeled tomatoes, fresh ricotta cheese, fresh buffalo mozzarella, bechamel and topped with real parmesan cheese. A portion is approximately 450-475 gr.

In the style of the crunchy croques/kroketten: freshly prepared at home, then frozen (not baked yet), for you to bake in your oven at home, at your convenience.
