Meal prep doesn't have to be difficult, time consuming or expensive.
Here's a meal I cooked last week:
1 cup dry lentils 1 zucchini, diced 2 tomatoes, diced 1 squash, diced 500g firm tofu, diced (can be replaced with chicken)
β’ 1 shallot, minced 3 garlic cloves, minced Turmeric powder Ginger powder Sea salt
β’ Black pepper Garlic powder
β’ Cajun seasoning
I didn't measure the spices.
I simply placed all the ingredients in my pressure cooker, covered them with water, and cooked for 10 minutes, followed by a 10-minute natural release.
That's it!

Iβve been craving pancakes after my workouts lately, so hereβs my favorite recipe for healthy, gluten-free, high-protein pancakes.
They take less than 10 minutes to make and are absolutely delicious!
Ingredients (Makes 2 servings):
β’ 2 scoops of plant-based vanilla protein powder (I use Purely Inspired)
β’ 1/2 cup oats
β’ 1/4 cup flax seeds
β’ 2 tsp baking powder
β’ Unsweetened almond milk (I donβt measureβjust pour until you get a smooth batter)
Instructions:
1. Blend the oats and flax seeds in a Nutribullet (or any blender) until they turn into a flour-like consistency.
2. Transfer the mixture to a large mixing bowl.
3. Add the protein powder and baking powder to the bowl.
4. Mix well, then slowly pour in the almond milk until the batter is smooth.
5. Cook the pancakes as you normally would.
Each serving typically makes 4 pancakes.
