Cashew Chicken Stir Fry ๐Ÿ›
Honestly thinking of creating a fakeaway recipe book.

Serves 4
515 Calories, 42g protein

680g boneless, skinless chicken thighs, fat trimmed & cut into 1-inch pieces
1 tbsp. white pepper
1 tsp. coconut oil
1 green bell pepper, chopped
1 onion, chopped
1 tbsp. cornstarch
60g unsalted roasted cashew nuts
400g cooked white rice
2 green onion, sliced
1 red chilli, sliced (optional)

For the sauce:
4 tbsp. water
4 tbsp. tamari sauce
2 tbsp. oyster sauce
3 tbsp. coconut sugar
1 tbsp. rice vinegar
2 garlic cloves

Place the sauce ingredients into a jar or bowl, stir to combine and set aside.

Place the chicken into a large bowl, season with 2-3 tablespoons of the sauce and the white pepper. Mix to combine, cover the bowl and set aside to marinate for 20 minutes.

Add the cornstarch to the remaining sauce, mix well, and set aside.

When ready to cook, add the coconut oil to a large skillet and place over medium-high heat. Add the bell pepper and onion to the skillet and cook for 2-3 minutes. Next add the chicken and cook for 7-8 minutes. Now reduce the heat to medium, and add the remaining sauce, stir continuously to warm the sauce.

Remove the skillet from the heat and mix through the cashews. Serve immediately with the cooked rice, garnished with green onions and the optional red chilli.

The best meal prep Yoghurt Lemon Chicken ๐Ÿคค

Serves 5โ€ฆ You will need:
juice of 1โ„2 large lemon
1 tbsp. olive oil
140g Greek yogurt
1 1โ„4 tsp. sea salt
black pepper
570g chicken breasts

In a bowl, combine the lemon juice, olive oil, Greek yogurt and sea salt and stir. Add the chicken breasts and stir so that the chicken is covered in the marinade. Cover the bowl and place into the refrigerator for 20 minutes (or up to 1 hour if time allows).

When ready to cook the chicken, preheat the oven to 200ยฐ C.

Remove the chicken from the refrigerator, shake off any excess marinade, and place on a baking dish. Discard any excess marinade.

Place the dish into the hot oven for 25 minutes until the chicken is cooked through.

When ready to serve, season to taste with black pepper and a little extra salt if required.

Per serving: 183 calories, 28g protein

๐Ÿฅ‘ Red Pesto, Avocado & Soft Egg Toast

Serves 2
You will need:
๐Ÿฅš 4 eggs
๐Ÿž 2 slices whole wheat bread, toasted
๐Ÿฅซ 4 tbsp. red pesto
๐Ÿฅ‘ 1 avocado, sliced

- Bring a small pot of water to a boil. Add the eggs, cover, and continue to boil for six minutes (or longer, depending on how you like your eggs cooked).

- After six minutes, remove the eggs from the pot and run them under cold water until they are cool enough to handle and peel.

- Toast the bread and spread each slice with 2 tablespoons of the red pesto, then top with the sliced avocado and eggs.
