Slow cooked brisket in red wine Steak bakes. Safe to say the boys at work loved them.

Brisket from a local butchers with 2 bottles red wine, beef stock, garlic purée, tomato purée, mixed herbs, on a bed mushrooms and chopped up onions underneath .. 8 hrs overnight... making steak bakes for the boys at work tomorrow.. yes the ones like Greggs but mine are much fancier.. watch this space! Nom nom

“LEFT-OVERS” VEGGY SOUP

Chopped up red onion, shallots, red chilli, garlic, handful of sundried tomatoes left whole, and tikka masala paste all fried up in oil and a dollop of butter in a pan. (Pretty much whatever you have laying around in the fridge that needs using up!)

The main body of the soup:

Cubed potatoes, roughly chopped up peppers, roughly chopped up mushrooms, chopped up leeks and celery, half jar of dolmio, half jar of garlic passata, big tin of Borlotti beans rinsed off. Chicken stock for flavour with a dollop of tomato purée.. tin of coconut milk towards the end for a creamier taste.

Put half the contents in a stock pot on the hob and boil gently for 20mins, and the rest in the soup maker on a chunky setting for 28mins.
Eat some, freeze some!

Lotus Biscoff Cheesecake. The Baking Explorer recipe. This was properly moreish, creamy, delicious and very indulgent.

My recreation of my favourite Boscanova Breakfast - Avocado Toast with poached egg, grilled bacon and maple syrup. Nothing complicated. Just mash up the avo with salt, pepper and vinegar.. spread on toast, lay the grilled bacon ontop, and put your poached eggs ontop of all that - drizzle maple syrup over everything and tuck in! Nom nom ...

Belgian Buns. A BBC GOOD FOOD RECIPE.

I attempted my first ever fish stew just before Christmas. The Moqueca - A Brazilian Fish Stew. Got all my ingredients together and popped it all in the slow cooker for 5 hours on medium. Was delicious.. I added a couple of cans of coconut milk and a couple of little boxes of coconut cream. Totally beaut! Are some and put some in the freezer for a meal after Christmas feasting.

Made the last festive batch of mince pies this weekend. Using up the pastry I had. Always a good excuse. This recipe is a BBC GOOD FOOD RECIPE. Totally delish! Very moreish..
