I reverse seared tonight as these were pretty thick! Very happy with the results.
It’s been a brilliantly manic few days, as always. I didn’t manage to get any pictures of complete meals but here’s a little selection of what I’ve been cooking. I hope every single person who follows me had a great Christmas and wish you all@the best for the new year! 🍻

Rubbed with honey hog wash then glazed with .co.uk bbq sauce
A couple of weeks ago I had the pleasure of cooking for a good friends birthday. I asked what he’d like and all he answered was meat!
So I came up with this. Chuck steak that I injected with a good quality beef stock the night before the cook. I then smoked for a few hours before brining in more beef stock. Who would of though beef injected with beef, cooked in beef would be amazing!!
What an amazing place for a holiday and what an amazing place to cook!
Some of the best bavette steaks I’ve had, thanks to a little advise from the steak king himself !
Topped off with the amazing chimmichurri sauce from .co.uk it went down very well!
Having taking the small but mighty .official Explorer on a little journey, I just had to get cooking on it!
I had to join in all of these fantastic cooks!
I used some 20% fat beef mince from our local butcher mixed with half an onion and some gaucho rub.
I tried these taco smash burgers a couple of weeks ago and have been itching to try them again. Really make a nice change to a conventional burger.
Topped off with the awesome funkin burger sauce from .co.uk it made for a top dinner!

I really enjoyed today. Found a bit of time to down tools (extension is still on going) and lit the kamado!

After accidentally eating all four kebabs last week my wife requested I get some more!
Miles very kindly diced some steak up and put the marinade in the bag so she didn’t miss out (as they has all sold out!)
Definitely hit the spot! Also got to try out my new mega long skewers I got for my birthday!
It’s been a while I know! A lot going on with extensions. But wanted to share tonight’s cook as by shear chance I drove past this place on my way home from work.
I had a great chat with at and bought some goodies for today and the weekend.
These piri piri marinated steak kebabs were bang on! Look out for the beautiful pieces of sirloin I bought soon!

Chilli smash burgers!
Smash burgers are pretty good as they are but these were even better with a good helping of chilli I cooked over the weekend!

A little bit of a theme this week but I do love a curry. By far one of my favourite things to cook on a bbq. It really does take the dish to another level.
This time I had a go at the chicken jalfrezi. Another absolute cracker!
I love the chunky veg in a jalfrezi and served with left over Bombay aloo this really did hit the spot!
I’m having a lot of fun putting the new .official V2 through its paces.
Here is the pork stir fry from the other night. Really simple nothing fancy just pork shoulder steaks cut into strips and rubbed in fools gold. With a little onion, broccoli, baby corn and peppers. Served with egg noodles.

So here is my entry for the restaurant roulette competition.
Venison loin which was shot and butchered less than a mile from where I live. Served with a port and cranberry sauce, potato rosti and pac choy
The only downside was that I was up against who as always produced an absolute belter!

So after I accidentally ordered a little too much lamb mince I found this recipe in the bible which definitely helped to use it up!
The flavour once again were incredible in part to cooking the keema twice.
Once again, I can recommend this book enough.
Chicken burgers were requested for dinner tonight, and I knew exactly what I was going to do.
I butterflied the chicken breast and added a small amount of Al pastor rub. Then whilst the chicken was cooking I basted with the Korean sweet chilli sauce
The flavour of this sauce is amazing! Nice and tangy and not too spicy (my five year old ate a whole burger!)
A perfect Saturday night meal!

I wanted to play around with the amounts of each ingredient in preparation for the recipe - Black pudding smash burgers

This is part two of my five day curry cook. The pre stewing of the leg of lamb.
This amazing piece of meat is a 2kg dry aged leg of lamb form our local butcher. Look at the colour! 😍
Once again I (sort of) followed the recipe form the bible although if I’m being honest I shouldn’t of cooked it that night. To much going on with work and life and didn’t read the recipe properly 🤦🏻♂️
Firstly I was supposed to cut up the leg (I didn’t I put it in whole)
Secondly I put the ground spices in way too early which soaked up all the oil.
Thirdly there was a fair bit of thick fat covering the top that I should of cut off.
So I’m the end I had to take the whole piece out and cut it up then put it back in the pot for another half an hour or so. So not really a problem in the end.
The plus side was the smells coming out of the kitchen were unbelievable!
