I had fun making this butternut squash and red lentil soup the other day.

It is incredible simple - you just need onions, a stock cube and some rosemary and some olive oil (plus a butternut squash and some lentils of course ;).

Healthy carrot cake anyone?

I made this with almonds instead of flour, olive oil instead of butter and ground linseed instead of eggs!

That makes it dairy free, gluten free and vegan too!

And, it tastes amazing! Especially when topped with a few fresh strawberries :)

Not all olive trees are the same! This variety - Serrana - has a twisted trunk (as you can see from this tree) and its olives bring a beautiful buttery flavour in comparison with the more typical peppery olives.

Yes, we have olive oil! Good news - the olive harvest is in and we have olive oil for 2024! Fortunately, the harvest for the Sierra Espadan at the end of 2023 was good! Not so fortunate was our neighbouring valley - Bejis / Sierra Calderona - where the harvest is down 80%!?!
