Free Range chicken cooked in a homemade mix of Ghanaian spices, fresh vegetable and rice noodles rolled in rice paper and served alongside a sweet and spicy Nuoc Cham dipping sauce - a marriage we didn’t know we needed! 👐🏽 Gluten Free and versatile, this can be made to suit any dietary requirement.

This week we are going Caribbean! Sunshine food with strong links and similarities to my beloved Ghanaian cuisine and another favourite cuisine I love to cook (and eat!!)🍲
Jamaican slow cooked oxtails are one of my personal favourites and a regular on our dinner plates at home. I'd love to cook it for you too and share my love for this gloriously happy food with you! 😍 This recipe is inspired by various ones I have experimented with over the years and is my favourite way to make it. Paired with fluffy coconut rice, fried plantains and a tangy citrus slaw, it will be the perfect way to end this gorgeous sunny week!

Hello hello! Well, that 5 minute break ended up being much longer than intended 😬

I have hugely missed our Friday Night Feasts & sharing my love of delicious Ghana with the lovely folk of Eastbourne & beyond.
So many lovely messages have been received since we took a pause & it’s been the most heartwarming thing. I am delighted to know we’re missed, but sorry to have kept you waiting.

Just a little update to let you know that we really will be back soon. As many of you know, The Tipsy Cooke begun when my youngest was not even a year old yet. Being a little Covid baby and not used to anyone but our household, it has taken lots of time and work to get her used to being without us. She will hopefully be starting nursery soon and is continuing to settle with her lovely nanny. But until she is happily sorted, I will not be able to return to the kitchen.

This is absolutely not a goodbye, we will be back before you can say Jack!! (Just say it slowly 😁). As soon as we are, you’ll have lots of wondrous new dishes as well as your old favourites to enjoy 💕
