With Burns Night coming up in a couple of months, I’m looking back at Burns Night 2021 when great fun was to be had. It was lovely to have a number of friends over to celebrate this event with plenty o’ food! 🔥

Happy Sunday! There’s a charm to a freshly cooked English breakfast which is simply unforgettable. Sausages, bacon, toast, baked beans, fried egg, black pudding and golden hash browns made the perfect combo for an early morning meal before a busy day ahead.

It’s the weekend, and you know what that means! Smoked salmon with cream cheese on oatcakes was overdue, although, everyday is a working day so Three Spirit was the perfect compromise, especially when mixed with ginger beer! 🍺

Flashback to pizza night, with it being the lodgers birthday, an impromptu party was due, it was rude not to let him get a slice of pizza making… was the yeast I could do. Topped off with a refined sugar free ‘healthy’ cake by , it was an unforgettable evening. 🍕 🎂

Who needs KFC when you can do a fakeaway? Home cooked fried chicken is unbeatable, especially when it’s made by my lodger, Ruaridh! I decided to take the backbench and leave Ruaridh to cook… safe to say, I was not disappointed. 🍗

Nevertheless, Ruaridh shouldn’t be underestimated as his ‘fire chicken’ blows your socks off (literally)! The dog sneezed on smell alone. 🔥

Reflecting on my bread-making journey, while many loathe the process of baking bread, at Jimbocooks, it’s a no-grainer. I love experimenting with different recipes, every day is a school day! The bread keeps getting better and better! 🍞 💪

While I only recently posted about this delicious breakfast, I couldn’t resist making it again. Humans are creatures of habit after all! 😁

Toasted olive sourdough paired with avocado is a force to be reckoned with. Adding chilli flakes, tomato concasse, chorizo batons and finally poached eggs (from the rescue chickens) provided those essential finishing touches; heaven! 😋

Throwback to when my real skills were put to the test.

Having cooked for many years, what better way to show off my true knowledge than teaching my lodger Ruaridh how to cook chicken parmigiana. Safe to say that this dish went down like a treat!
