MOROCCAN SPICY LENTIL STEW

A delicious densely nutritious meal: lentils are without doubt among the best sources of vegetable protein. The herbs and spices fire up the digestion and are also anti-inflammatory and immune-boosting. Serves 6

2tsp oil
1 large onion
4 garlic cloves chopped
1 tsp cumin
1 tsp ground turmeric
1 tsp ground coriander
½ tsp cinnamon
1 tsp sweet paprika
250g sweet potatoes peeled and chopped
100g Puy lentils
750 ml vegetable stock
4 large tomatoes
250g courgette

🎃Heat oil in a large sauce pan, over low to medium heat.
🎃Fry onion until softened. Add garlic and all the spices and fry for a couple more minutes.
🎃Stir in sweep potatoes and lentils cover with vegetables stock. Gently simmer for 20 minutes. Stir in courgettes and cook for a further 15 minutes until the lentils are soft.
