Make Thursday feel like a Friday with vegan coconut, banana & almond butter pancakes! 🤩
RECIPE 🌱
300g self raising flour
1 tsp baking powder
1 tbsp sugar
1 tbsp vanilla extract
400ml plant milk (we used oat)
1 tbsp veg oil for cooking
Whisk the flour, baking powder, sugar, vanilla & a pinch of salt in a bowl. Slowly pour the milk until you get a smooth, thick batter.
Heat a little oil in a pan over a medium heat, then spoon 2 tbsp batter into the pan. Cook for 2-3 minutes until edges are set and bubbles form, then flip and cook for a further 2-3 minutes. Repeat for the rest of the batter, and serve with desired toppings!

Since its release on March 24th, its caused quite the splash (pun intended). Whilst the devastating and depressing scenes don’t come as a surprise to many, there is no denying how impactful this documentary has already been.
Despite watching the majority of the documentary through my fingers, I have found myself confused by the reaction. The only reactions being to either despair, or to deny. But is this really a constructive way to look at it?
