We aimed to craft an easy-to-drink Paloma with a twist, featuring great aromatic complexity. This is achieved through a cold infusion of milk oolong and passionberry pepper at 8°C in mead wine, ensuring a gentle extraction to avoid bitterness and excessive tannins.
