🍊Terry’s Chocolate Orange Cake🍫
For all you chocolate orange fans! You have got to try this one out! 🙌🏾
Ingredients
* 350g light brown sugar
* 85g cocoa
* 135ml Aquafaba
* 370g plain flour
* 1tsp baking powder
* 1tsp bicarbonate of soda
* Pinch of salt
* 1.5tbsp orange extract
* 1tbsp orange zest
* 250ml milk
* 125ml rapeseed oil
* 250ml boiling water
Ganache
* 2 Dark Terry's chocolate orange
* 1 Small tub double cream
* 1tsp orange extract
Decoration
* 1x dark & 1x milk Terry’s Chocolate orange and Orange Zest.
Method
1. Cake: Preheat oven to 190ºC and line 2 sandwich tins (I used 7-inch) with baking paper.
2. Beat the eggs replacement, sugar and oil in a bowl. Add in all of the other ingredients except for the boiling water and mix. Add in the boiling water (the batter should be runny)
3. Distribute between the two baking pans and bake for 1/2 hour or until fully baked.
4. Ganache (recommend making on the day of serving): heat the cream in a small pan on very low heat until below boiling point. Chop the Terry's chocolate into small pieces and add into the pan. Let it sit for a couple minutes. Whisk the chocolate into the cream until fully combined and melted. Put the pan in the fridge until cool, this will allow it to thicken.
5. Decoration: When the cakes are cool, level the cakes using a knife. Place one cake on a turntable or stand.
6. Scoop some of the ganache onto the cake and spread evenly. Place the second cake on top.
7. Using a spoon, transfer around a quarter of the chocolate ganache on to the cake on the turntable. Use a palette knife to spread it around. Don't worry if some of the filling drips down the side of the cake.
8. Place the other cake on top of the cake on the turntable and press down sandwiching the two cakes together.
9. Microwave the rest of the ganache in very short bursts to prevent splitting. Once runny, pour over the cake making sure to cover all areas of the cake. Use a palette knife to spread it over the sides of the cake.
10. Place the cake in the fridge for 5 minutes to harden slightly before placing the orange segments around the cake.
🧀 Sweet & Spicy Camembert! 🌶
Still not over the Christmas cheese craze?… This dish is the best starter with a twist of sweetness, heat and cheese!
Ingredients:
- 1x Camembert
- 4x Green Thin Chillies (sliced, based on heat)
- 30g Walnuts (chopped)
- 5 tbsp Apricot Jam
- 1x Baguette (sliced)
Method:
1) Pre-heat the oven to 180 degrees. Lightly brush your preferred baking tray with some olive oil.
2) Slice the camembert into two circles. Spread 2 tbsp of apricot jam onto one of the slices of camembert. Sprinkle roughly half of the chillies and walnuts. Place the other slice of camembert on top and repeat with the remaining jam, chillies and walnuts.
3) Place the cheese and bread onto a baking tray and lightly brush some oil over the bread. Bake until the cheese is cooked and bread is golden (roughly 25 minutes).

Japanese Pancakes
⚠️ 🚨SUGAR COMA ALERT !🚨 ⚠️
Ingredients
* 150g Self-Raising Flour
* 1/2 tsp Baking Powder
* 2 tbsp Agave Syrup The Groovy Food Company]
* 2 Eggs*
* 180ml Milk/Soya Milk
* 1 tbsp Oil (I used coconut oil) The Groovy Food Company]
* 1.5 tsp Vanilla Extract
* Fruit/Nuts/Toppings of your choice!
* Syrups/Spreads of your choice (I prefer Maple 😍)
Method:
1. Add the flour, baking powder and agave into a bowl. Making a well, add in the oil and eggs stirring it into the flour. Gradually add the milk mixing each time. Add in the vanilla and make sure everything is fully blended. (I used a blender 👀)
2. Heat a non-stick pan on low heat and place a crumpet ring (I used a high round biscuit cutter) in the pan. Spray/brush some oil on the ring and pan. Pour the batter into the ring (max 3/4 of the way) and cover the pan with a lid for around 10 mins. This should for some bubbles on the top of the pancake and the edges should be dry.
3. Gently flip the ring/pancake over (careful the ring will be hot! Use a spatula) Cook for another 1-2 mins.
4. Keep warm while you cook the rest! Stack and serve with the best toppings!!!
*to make it vegan, why not try using a mashed banana!
