🎄5 days to go, behind today’s door, we would like to share with you all a recipe for a Jamaican Christmas cake we hope you all enjoy lets us know if you make it. 🎄 ⠀

Jamaican Christmas cake- makes 2 cakes⠀
Prepare your dried fruits⠀
---------------------------------------------------⠀
1) Simmer 2 cups red label wine and 1 cup Jamaican White Rum over low heat, then add 1/2 cup dried raisins, 1/2 cup dried currants, 1/2 cup dried cranberries, and 1/2 cup chopped pitted prunes.⠀

2) When all liquid has evaporated turn off the stove and let your fruits cool until the next day. (you can leave overnight on the stovetop)⠀

((Alternatively, you can soak your fruits in red label and white rum for over a month for better taste.)))⠀
⠀
NEXT DAY⠀
3) Heat oven to 350 degrees or gas mark 4⠀
⠀
4) Cream In an electric mixer 16 oz of dark brown sugar and 16 oz of unsalted butter until smooth.⠀
⠀
5) Add 12 large eggs to the creamed butter and sugar mixture, followed by 2 tbsp vanilla, nutmeg, and cinnamon.⠀
⠀
6) Combine in a bowl, 6 oz all-purpose sifted flour, 3 tbs baking powder.⠀
⠀
7)Alternate your flour and fruit mixture to your cream mixture and blend in your electric mixer (Do not beat). Add 5 tbs browning to your mixture and mix well.⠀
⠀
8) Grease and line 2 eight-inch baking pans with butter or nonstick spray⠀
Fill pans 3/4 full, Bake until done ((approximately 45 mins))⠀
⠀
9) Meanwhile, mix 1/4 cup red label wine and 1/8 cup white rum and pour over cakes while they are still hot.⠀

10 ) Leave cakes in the pan to cool and enjoy ⠀
