Afternoon, All! 🩷

I have been busy trying to for my little one. I find it so much easier to make simple and pop them in the freezer so I can just grab and go!

My son LOVES these from Ella's Kitchen and you can adapt them, to mix up the flavours! I substituted the courgette for Broccoli and Tomatoes and used Cheddar instead of Parmesan.

I thought I’d share the recipe I used below:
- 1 Cup of Broccoli Florets (chopped Finely)
- 1/4 Cup Cherry Tomatoes (Chopped Finely)
- 3 eggs
- 90g Plain Flour
- Splash of Whole Milk
- 60g Cheddar Cheese
- 1/2 teaspoon unsalted butter for frying

1. Place the Finely Chopped Broccoli in a Saucepan and cover with water, bring this to the boil and let it simmer for about 8 minutes or until soft.

2. Place the cooked broccoli, chopped tomatoes, eggs and flour into a bowl and mix until all ingredients are combined.

3. Stir in the Cheese and a Splash of Milk (if the mixture looks too runny, add more flour)

4. Heat up a frying pan and add 1/2 teaspoon on unsalted butter.

5. Add 2 heaped tablespoons of the mixture to the pan, to make one fritter. Cook each fritter for 2-3 minutes on each side or until golden brown.

Suitable for Freezing - use within 1 Month 🩷
