Today we're very excited to be down to press these beautiful organic Dabinette apples grown at
The resulting juice will be fermented with local honey to produce our first Cyser.
Needless to say we can't wait to see how this comes out!

We had a little experiment over the weekend, inspired by a Negroni but playing the to flavours in our Mixed Ferm Redcurrant Mead.
Have to say it worked well, easy on the bitters and probably stick to an unflavoured Vermouth.

Today I'm packaging something I think is a bit special. Barrel fermented with Brett and Kveik Redcurrant Mead, it's light, funky, dry and tart. Lead with a honey aroma from Peak District Heather Honey, with flavours I'm finding hard to describe! But it's beautifully easy drinking.
I don't like the word unique but I think this comes close, would love to hear of any other people making dry and mixed fermented meads.
It'll be available in keg and bottle soon, give us a shout if you're interested in it.
Anyway I'm pretty excited about this one and I think it really shows what we're trying to do with the mead
We've been busy the last few weeks balancing brewing and school holidays.
This is almost ready after a few weeks fermenting away, and we're really chuffed with it, a bit unusual but we hope you like it.
Peak District Heather Honey + Organic Red Currants + Kveik + Brett + Oak

Honey and fruit combined and fermented in a bretted oak barrel. Dry but smooth with a subtle funky character, hints of red fruit balance a dry and tart finish.
No name as yet, I'll mull it over. It'll be going into bottles very soon and possibly keg if anyone is interested

Our latest mead is out this week.
Fermented on a mix of Heather Honey and Spring Blossom with Saison and White wine yeast.
Strong honey aroma leads into a complex flavour of blossom, honey, fruit, Candi sugar and spice.
Superbly light and balanced, this will age well and develop over time.

Cask Mead!
We've filled a cask with mead for our great friends
Along with a cask Belgian Braggot ( X .mead ) and some bottles, we'll be doing a mead tasting and meet the brewer.
Quite possibly the only cask of mead ever in Sheffield.
Come down and say hi, we're also pretty chuffed to be on the bar alongside brewing heroes of ours

Absolutely in love with the colour!

Elderflower Session Mead

Made with Heather Honey from north Sheffield, and fermented with foraged Elderflowers. Super light and beautifully floral, this is going to be absolutely great for drinking in the sunshine! (First Picture)
Sparkling Mead

Fermented on a combination of Limeflower honey and Heather Honey courtesy of .honey. It's dry and fruity, spice and cooked peaches on the nose, followed by stone fruit, lemon and lime, more citrus on a crisp finish.
Absolutely great with food or equally as good on its own!
If you want to stock either give us a shout, stock is pretty limited as usual.
You can now get our current bottles of mead at and in both bottles and by the glass at taproom which is open tomorrow between 2pm and 10pm
