Was wondering if I could still be creative I had a couple of pointed peppers to use up and some courgettes. So I made this inspired red pepper schnitzel topped with coconut harissa yougurt and courgette bulgar tabbouleh .
Tonight's dinner Oyster Mushroom taco plate. Inspired by and his recent cookbook flavours. I pulled some cactus soft corn tacos from out of the freezer
Also luckily had some black beans in the freezer too. Served with guacamole pink onions and slices of blood oranges .Plant based but also those mushrooms have such a great texture and taste.
If you are thinking of growing anything this year, try Perpetual Spinach,its a bit like a chard but grows happily through a Dorset winter. It's quite happy growing in a wooden box and won't go all wilty if there is a bit of frost. I have been using it in curries, pastas ,smoothies or as the star of its own show in a cashew cheese sauce topped with coconut bacon.
