Took a while to share this, a cake for a friends birthday...transported almost intact. π

It's π delicious, just right for a weekday treat.
Mostly though I love how easily it turned out, with and my mother's words about properly flouring the tin ringing in my ears this dropped out smoothly and easily!

Hoping that this turns out well, it's for the school fete! I've taken my favourite pear π pistachio and chocolate cake and taken out the pistachio, because you know allergies and other people's children.
So in an attempt to make it pretty I've lined a bundt tin with thinly sliced pear and put the cake mix over it...I'll let you know how it turns out. Or even if it will turn out ππ¬π€
Zesty π Maderia cake for afternoon tea anyone? We made this little loaf cake yesterday, with just lemon zest for flavour it's a deliciously simple cake. It was really easy for my kids to help make and kept them entertained in the rainy weather π

I'd suggest adding more zest than the recipe calls for if like us you like citrus flavours.
When your kids love baking and you have to make a cake at breakfast π. This is our second attempt at Pear, Pistachio and Chocolate cake and it's definitely going to be a recipe we use again.

The only tweaks we made were two use two pears rather than one (because The Back Yard Lemon Tree are in Sidney and I figured they probably have bigger pears) and to use salted butter, just because it's all I had.

I know you're supposed to use stylish pictures on social media but these brownies are too good to spend time with photo styling π€£. I have taken a long time to find a brownie that I like, I find the fudgy ones way too heavy and the cake ones too dry. However this is at once light and gooey. Hurray!
I used melted unsalted butter, demerara sugar, plain flour, 2 eggs, bournville coco powder, , a pinch of salt and some vanilla essence.
Hello weekend and hello cornflake cakeπππ½ππΎ. Carmel, nougat and golden syrup cornflake cakes to be precise π. Easy to make and fun for smaller children to help with, perfect for Saturday morning fun.
I did originally try this with another well known caramel nougat bar. After some experimentation however I decided Titan bars are best. Not only for your pocket, but because they melt down into a smoother texture that is easier to mix into the cornfakes, so you get a better end result. Think full conflake versus crushed powder π
I initially followed a recipe from but added a few tweaks to suit me. I prefer salted butter for example as it adds something to counter the super sweet flavours...no really it does π
To make your own (20 bars worth π) all you need to do it melt together 140 grams salted butter and 5 big spoons of golden syrup in a pan then added 12 chopped up
Next weigh out 400grams of cornflakes (into a massive mixing bowl) add the melted butter, syrup and titan bars into this and mix carefully.
Squish your mix into a lined tray or other dish. You can put on some fancy sliced up leftover titan bars to the cake, if you have any. I drizzled on a tiny bit of maple syrup, just to add an extra depth of flavour, but feel free not to if it's not to your taste. Then leave it to set for an hour ish before cutting up.
I think they taste lush, and are a very sophisticated version of a classic chocolate cornflake cake.
I found they last a week if they're kept in a tin or wrapped up.
Back making muffins after taking some time off during maternity leave, these are for a friend. Hopefully they'll like the flavours, they're lemon and chia seed, wholemeal raspberry blackberry and blackcurrant, and wholemeal chocolate chip.

Vanilla and strawberry sponge cupcakes, brownie slices, carrot cake and Anzac biscuits dipped in dark chocolate and coconut.
I've been perfecting my and chocolate cake recipe this weekend.π
It's really simple to make your own ganache (if I can do it...). All you need is cream, sugar, chocolate, a bit of butter and a pinch of salt.
In a pan dissolve the sugar into the cream, bring it to a rolling boil then take off the heat . Add your chocolate and keep stirring until it's all melted in. Put in a pinch of salt. Then add in your butter bit by bit, keep stirring π₯. Leave it to cool et voilΓ , ganache!

I'm really enjoying making Welsh cakes and practicing with my bakestone π.
I asked some friends earlier if they preferred them with or without sugar. Turns out you definitely should and also should not have them with sugarπ. It's a bit like the whole jam and cream thing I guess!

We have been lucky with the weather today and yesterday π. Enjoying spend time together as a family and get some fresh air.
Daddy did all the cooking yesterday and even made us mince pies...all eaten up before I had a chance to take a photo.
