This year’s meat canapé of sobrasada inside a fuille de brick tartlette case was a clear favourite of the judges. At the end of the long deliberations in other categories, it was clear Ellie had taken the meat category by storm. The platter she served to the judges was the only in that category empty, not even a crumb left over! A perfect bite full of flavour and texture.
