Moroccan Inspired Grain Salad:

[  ] 1 sliced Preserved Lemon
[  ] 1 Tin of chickpeas
[  ] Sainsburys 250g Cooked Chickpeas and Quinoa
[  ] 1 tsp Ras el hanout
[  ] 1 tsp Mixed spice
[  ] 1 tbsp chopped parsley
[  ] 1 tbsp chopped coriander
[  ] 1 tbsp mixed chopped nuts
[  ] 1 orange peeled and chopped
[  ] 6 Dried apricots chopped

Dressing:

2 tbsp White vinegar
2 tbsp Olive Oil
Juice of 1 lemon or lime

Friday Night Family Meal....this is a lighter version of a Chicken Korma using Greek yoghurt. I used Skyr Yoghurt as it is higher in protein than Greek yoghurt with all the same benefits. Low fat yet creamy and very moreish indeed, this requires no oil as the chicken cooks in the sauce. I was so hungry I forgot to take a before picture so what you have here is a midway pic. This is very filling ....Great recipe 👌

Today's tired called for a massive protein hit to supplement my training....."Asparagus and Leek Fritatta", served with salad. Makes 6-8 portions.

8 Eggs
100ml Milk
2 Leeks
100g Chopped Asparagus
2 Tbsp Chopped Parsley
1 Tbsp Chives
Seasoning

"Summer Berry Breakfast for Sun-Deprived Brits":
🥣🥣
Handful of fresh fruit
Chopped mint leaves
Low fat Greek Yoghurt
Handful of Granola
Drizzle of Agave/Honey

☁️ Waking up to another disappointing UK summer day. Where on earth has the sun gone?! We had a week in June of heatwave....so was that it ⏰? Did I miss a Season 💤? Nonetheless, if you want to feel summery and treat yourself to a breakfast full of calcium and Vitamin D - the sunshine 🌞 vitamin, which lets face it, us seasonally light-challenged peeps need, then this is the bowl for you......

Courgette and Shrimp Salad from "Davina's Sugar free in a Hurry"....OMG, this is amazing, so simple, so full of flavour and ideal if you are looking for a low carb recipe. I used Lemon and Thyme Olive Oil with mine. I had run out of Rocket leaves but was able to substitute fresh coriander, just because I love it, and it needed using!

Three Grain Porridge:
2 tbsp Jumbo Oats
1 tbsp Spelt Flakes
1 tbsp Barley Flakes
1 tsp Sunflower seeds
300ml Milk
Agave syrup to sweeten

Definitely one to repeat, I like the chewie texture and fuller flavour. Just what I needed today, not a very nice start to the day 🌧

GREAT WAY TO GET KIDS TO EAT HEALTHILY, THIS IS JOE'S TUNA AND COURGETTE FRITTERS. Winner here!!!! Filling, healthy lunch or tea option with OILY FISH....rich in Omega-3 Polyunsaturated fatty acids to reduce inflammation, risk of Heart Disease, Cancer, Arthritis....whats not to love? Husband loved it, I loved it, the boy really loved it.

Family favourite! Love this one; it is a staple on our weekly menu. Its tasty, full of hidden veg too and benefits from the sweet potato tweak. It takes a fair amount of prep but it is well worth it....its one of those dishes that you literally come away from, feeling healthy and nourished. Comfort food that is good for you.
