We are so grateful for the community support from many businesses and individuals for our raffle last week. Tickets were drawn at the quiz night and allocated randomly.

Thank you to everyone that donated a prize and bought a raffle ticket. It raised just over Β£1000! π
π§βπ³ This weekβs Larder recipe is Mushroom Stroganoff. We usually have mushrooms at the Larder and often peppers.
π§βπ³ 3oz butter
1 large onion, chopped
1 green pepper, sliced
2 tbsp cornflour
4 tbsp red wine (Google substitutes)
200ml single cream mixed with 2 tbsp lemon juice
Dash soy sauce
Mushrooms
π§βπ³ Fry mushrooms, pepper and onion in butter until they begin to soften. Stir in cornflour, cook 1 minute and season.
Add wine, cream and soy sauce. Sommer 3-4 minutes. Serve with tagliatelle.

π§βπ³ Sweet and Sour Tofu
π§βπ³ This week we have a tofu recipe, when we have tofu at the Larder it does not tend to fly out of the door, probably as people are unsure of how to cook it, keep this recipe ready for next time it arrives!
π§βπ³ 1 20oz can of pineapple chunks, packed in juice
3 tbsp rice-wine vinegar (Google alternatives)
2 tbsp ketchup
2 tbsp soy sauce
1 tbsp brown sugar
1 x 14oz block extra-firm water-packed tofu, drained, rinsed and cut into Β½β cubes
2 tsp cornflour
2 tbsp minced garlic
1 tbsp minced ginger
2 tbsp oil, divided
1 large red pepper, cut into Β½β x 2β strips
1 large green pepper, cut into Β½β x 2β strips
π§βπ³ Drain and set aside pineapple, reserving ΒΌ cup of the juice. Whisk the reserved pineapple juice, vinegar, ketchup. Soy sauce and sugar in a medium bowl until smooth.
Place tofu in a large bowl, toss with 3 tbsp of the sauce and allow to marinate for at least 5 minutes and up to 30 minutes.
Meanwhile, add the cornflour to the remaining sauce and whisk until smooth.
Heat 1 tbsp oil in a large non-stick skillet over a medium-high heat. Transfer the tofu to the pan using a slotted spoon, whisk any remaining marinade into the bowl of reserved sauce. Cook the tofu, stirring every 1-2 minutes, until golden brown, 7-9 minutes total. Transfer to a plate.
Add the remaining oil to the pan and heat over medium heat. Add garlic and ginger and cook, stirring constantly until fragrant, about 30 seconds. Add red and green peppers and cook, stirring often until tender, 2 to 3 minutes.
Pour in the reserved sauce and cook, stirring until thickened, about 30 seconds. Add the tofu and pineapple and cook, stirring gently until heated through, about 2 minutes more. If you like a little heat crushed red pepper or garlic-chilli sauce can be added.

π©βπ³ This week's recipe is carrot and ginger soup, colourful, high in nutrition and low on cost.
π©βπ³ 1 medium onion
1 garlic clove, chopped
1 tbsp oil
700g carrots, peeled and chopped
1 tsp grated ginger root
Salt and freshly ground black pepper to season
900ml light vegetable stock
TO SERVE:
Fresh parsley
Plain yoghurt (optional)
π©βπ³ Saute the onion and garlic in the oil for 5 minutes in a covered pan without browning.
Add the carrots, ginger and a sprinkling of salt. Cover and lightly fry for 10 minutes, stirring occasional.
Add the stock, bring to the boil then simmer for 15 minutes, or until the carrots are tender.
Puree the soup in blender or mash with a fork if you prefer a chunky soup.
Reheat to serve, add a swirl of plain yoghurt, if liked and garnish with fresh parsley.

π©βπ³ This week's recipe is Vegetable Paella. An easy recipe in that the stock goes in all at once!
π©βπ³ 1 medium onion, chopped
2 cloves garlic
2 tsp paprika
200g paella or short grain rice
900ml vegetable stock
A few strands saffron threads (optional)
1 tbsp tomato puree
150g fine green beans, trimmed
1 large red pepper, seeded and diced
1 medium courgette, sliced
300g Borlotti beans (or other eg. butter beans or flageolet)
2 large tomatoes cut into chunks
Salt and pepper
Small handful parsley, chopped
π©βπ³ Fry onion in a deep frying or saute pan in a little oil over medium heat, covered for 5 minutes to soften. Remove the lid, turn up the heat and cook for 3-4 minutes until beginning to brown.
Stir in the garlic, paprika and rice and pour over the stock. If using saffron, add to the rice with the tomato puree, then simmer for 20 minutes.
Meanwhile, cut the green beans into 4 cm lengths and boil for 1 minutes, drain.
Warm a large frying pan, add a little oil and cook the pepper and courgette over a high heat for 5 minutes or until browning.
Stir into the rice with the green beans, canned beans and tomatoes. Cover and cook for 5 minutes or until the rice is tender. Season if needed and just before serving fold in the chopped parsley.

π©βπ³ This week I have a quick and easy recipe for you with most ingredients available from the larder.
π©βπ³ 1 onion, chopped
1 large carrot, grated
Tin chopped tomatoes
Mixed herbs to taste
Small tin of sweetcorn
Red or yellow pepper, chopped
Can of baked beans
TOPPING:
Mashed potatoes
Grated cheese
π©βπ³ Simply amalgamate all the ingredients above except mash and cheese, transfer to a casserole dish and add mashed potato and grated cheese on top. Cook 200C for 20 minutes.

The food is sourced from the Milton Keynes branch of FareShare, the UKβs biggest surplus food redistribution charity in partnership with SOFEA, a charity which works with young people to develop their skills and employability.
