Cadet is searching for a new head chef!

With the Varrons residency finishing at the end of the year we are beginning the search for a new permanent head chef to join our team.

We are looking for an experienced cook who appreciates classic European fare, who can put together an evolving menu to accompany all the beautiful charcuterie from George Jephson, with whom we share the building.

Working within a small and supportive team, the right person will be passionate about produce and will continue to build our relationships with the small suppliers we work with. A love of wine helps, but is not essential - we are happy to share our enthusiasm and teach you more!

We are looking for candidates with 1-3 years experience of senior kitchen management, familiar with all the administrative duties that come at this position.

This is a unique opportunity for someone looking to take the next steps in their career, and comes with further potential opportunities as we look to grow the business beyond just our site in Newington Green.

Join us on Sunday 27th October when we will be celebrating Alsace with winemakers Christophe Lindenlaub and Anne-Laure Laengel!

There is no doubt that Alsace is one of the most exciting wine regions in Europe right now. With a new generation bringing a focus onto organic farming and a lighter touch in the cellar, the results are astounding. Two people who perfectly encapsulate this energy, Anne-Laure and Christophe, will be joining us all day on the 27th to pour vintages new and old of their beautiful wines.

What’s more, the Varrons team have written a very special one-off menu to complement these new arrivals, drawing on the rich Alsatian culinary heritage with dishes including Choucroute Garnie and Spaetzle, with some special charcuterie from George Jephson and co.

We’re expecting this to be a busy so if you would like to come along we would highly recommend reserving a table. Tables can be booked as usual for lunch and dinner online however we will keep a few seats on the bar for walk-ins, and the bar will be open between services for those wanting a glass and some pâté.

Join us next Sunday 22nd September for a Varrons Cassoulet Party featuring winemakers Rodolphe Gianesini & Laetitia Ourliac of Domaine Fond Cyprès in Corbières!

As the leaves begin to fall from the trees and the temperature drops a few degrees, few things give us as much pleasure as opening bottles from Fond Cyprès alongside a bubbling cassoulet. With their new vintage arriving just in time for the coming of Autumn, we could think of no better way to celebrate than with a cassoulet party of our own, evoking the spirit of Rodolphe and Laetitia’s nearby medieval city of Carcassonne.

With their residency off to a fantastic start, the Varrons team have written a one-off menu to complement the new arrivals from the domaine, including the famed ‘Cassoulet Carcassonne’, with some special charcuterie also coming from George Jephson and co.
And of course, on hand throughout the day will be Rodolphe and Laetitia, helping us pour their wonderful wines, with a range available by the glass spanning the last 5 vintages.

We’re expecting this to be a busy one so if you would like to come along we would highly recommend reserving a table. Tables can be booked as usual for lunch and dinner online however we will keep a few seats on the bar for those wanting to walk in on the day.

The sun is shining once again and we are open all day for a little bank holiday party! Chris will be serving his menu from 12pm - 3pm and then from 6pm - 9.30pm with charcuterie and oysters served throughout the day. Lots of space for walk-ins so pop down and we will find a spot for you.

A lot of fun wines open from magnum and a couple of very special bottles from the cellar... All by the glass!

On Sunday 9th June we are thrilled to welcome chef Isabel Garcia into the Cadet kitchen for the next installment of our guest series.

Currently based in Paris, Isabel is well-known to many of the team here at Cadet. Her time in London a few years ago was spent split between much-missed restaurants Bright and Flor, where she cooked alongside Jamie and Julie. Since then, after travels to Mexico and her native Columbia, she forged a name for herself within the Parisian wine bar scene, running the kitchens at the brilliant Aux Deux Amis, Delicatessen and Fulgurances among others. Now feels like a very appropriate time to reunite the team for what promises to be a very special Sunday!

Isabel will be collaborating with Julie and Jamie on a one-off menu, where you can expect a riot of of the most beautiful produce that is now coming into season. Alongside this we will of course have a special list of wines dug out from the cellar, poured by the glass from bottle and magnum.

The kitchen will run from 2pm - 9pm (or until we sell out), bar open ’til late. No reservations, but we will run a waiting list if we cannot seat you straight away.

After much deliberation we have decided to start taking bookings for lunch and dinner when we reopen in 2024. We will continue to keep half the room for walk-ins, so those wanting to pop in spontaneously, whether for a glass or for dinner, will still be welcomed in with open arms.

On Sunday 21st May we are thrilled to be welcoming to the bar Claudiu Dumea, one half of Pfalz based winemaking duo Hannes and Claudiu, who will be donning a blue apron and pouring all their latest releases.

Hannes & Claudiu are based in South Pfalz, Germany surrounded by the dense Palatinate Forest, Hannes Bergdoll and Claudiu Dumea creatively collaborate to produce stunning wines of immense drinkability and charm. The two met in Frankfurt, where Claudiu continues to run a wine bar called Espresso Espresso. A friendship blossomed, and when the two decided to try their hand at vinification, Hannes’ family offered a portion of their biodynamically certified vines up for the worthy project.

From the municipality of Landau they grow native and international grapes like riesling, scheurebe, silvaner, müller-thurgau, gelber muskateller, huxel, weißburgunder, grauburgunder, chardonnay, spätburgunder, donfelder and blauer portugieser, and the team approaches winemaking from two equally important angles.

Jamie will be creating a special menu to accompany the wines. The kitchen will be open from 2pm to 9pm and although we will not be taking bookings, we will, as usual, be running a wait-list on the day.
