Chipotle Spiced Garbanzo Beans!
Something funny about me is that I get anxious thinking about what I'm going to eat or snack on while traveling. I've heard other people struggle with making smart choices while on trips. I used to travel across the country weekly for work so I had to get creative and find solutions so that I could keep up healthy eating habits.
One trick I've adopted is that I prep homemade snacks to bring on flights, so that at least on the outbound travel I can control the quality of what I'm eating.
These roasted chickpeas are one of my all time favorite. They totally hit the spot when you're craving something salty, which for me is often!
I'll be sharing some other travel tips in the future and plan to food journal when my husband and I take a fun Spring trip next month.
1 can (15oz) of garbanzo beans (rinsed)
1 tbsp of olive oil
1 tsp of turmeric powder
1 tsp of chipotle chili powder
1 tsp of salt
Mix all together on a sheet pan. Roast in a 375 degree oven for 40 minutes mixing every 15 minutes. Turn off oven and let sit for additional 20 minutes.

Tasty snack:
Mix Greek yoghurt with honey. Stir well and spread on a baking try lined with parchment paper. Cover with your favorite fruits and nuts. Leave to harden in the freezer, break into pieces and you have one delicious healthy snack.
