Chicken Saltimbocca with Parma ham and fresh sage

Saltimbocca is thought to have been invented in Brescia, in Italy's northern Lombardy region.

Traditionally made with veal, rather than chicken, Saltimbocca loosely translates as ‘jump in the mouth’.
