As some of you may know, I’ve never been a fan of the more traditional flavours of Welshcakes such as currants and spices, which is why I’ve always loved creating new and different flavours so that everyone can love and enjoy Welshcakes.
So in honour of St David’s day, I’d be interested to know if there’s any flavour suggestions or combinations I haven’t done before that people are interested in?

So this post is a slight throwback as I realised I’ve never posted this about this on my page! 3 years ago today I entered my first competition! At the time just a shy 17 year old studying on a bakery course when my lecturer approached me and my my best friend on the course to compete in a world skills competition, I was terrified but excited to take part, so we started training. The brief for the competition was a chocolate and sugar sculpture with a height of 30cm, and 30 petit fours, 2 different flavours having to weigh between six and 14 grams. So after months of training and some minor fails, we travelled to Llandrillo to final take part in the competition! And this is the part I still can’t believe to this day but I WON GOLD in the advanced patisserie and confectionery awards! 🏆🥇Honestly somehow this achievement and experience still feels surreal to me even to this day but it’s something I’m so incredibly grateful to have had to chance to take part in!
