Pressing team on Harry Masters Jersey today. We love this variety for its hard tannin. Given a long maturation period this becomes much more gentle and gives a real depth of flavour to the blend.

These Three counties & Harry masters Jersey are being milled and pressed today by the team in Stanway. As expected sugar levels are much lower than usual due to the sun not making of an appearance this year.

Another years pressing is about to commence at Stanway.
First in are these lovely Green Horse perry pears. We've chosen this variety to give a lovely zesty citrus like acidity to our perry blend. If all goes well we'll be launching this new product next summer.

Prior's Tipple. This is a clear lightly sparkling cider, which pairs great with a spicy food. Served well chilled.

And today Tobe is pressing these lovely Ellis bitter apples. It's our first time using this variety so will be interesting to see how this tannin high juice develops as it becomes cider.
Sky high sugar level readings again this morning. When fermented we expect this to be close to 8.6% ABV!
Today the pressing team are working on a lovely load of Harry masters Jersey. We're hoping that the punchy tannin this variety delivers will make it a valuable blender to compliment a few softer tannin varieties.

Ciders blended and ready for the CAMRA beer and cider festival at Moreton in Marsh cricket club tomorrow. Making its debut is cricket themed, "the night watchman".
They'll be an excellent selection of fine artisan ciders from across the three counties. Promises to be a good one!

Very happy to be back in the awards again with PT elderflower infusion winning cider of the festival at this weekends North Cotswold CAMRA event.
It's a happy hunting ground for this product as it became third time winner after being runner up last time out.
Thanks to all who drank and enjoyed it yesterday. You thirsty lot cleared us out! But not to worry as a further consignment of PT original has just been prepared and is on its way to the Toddington bar π»
After a busy morning blending and creating cider we finally have our entrants for the Noth Cotswold CAMRA steam & ale event this weekend.
We'll be launching our new "de-railed" cider which has been created especially for this event. Also available will be our elderflower infusion cider, 2 x champion cider at the previous events.
It promises to be an excellent event with bars at both Toddington and Winchcombe stations selling some of the finest ciders and perries made in the three counties. If you're lucky enough to attend then please drink plenty of PT, first cider to sell out wins!
The sun sets on another day in Stanway.
It's been a busy evening tasting ciders and preparing vats ready to blend a new batch of PT medium dry cider for bottling tomorrow.
After some deliberation I've decided on a 2020 Three counties which has some lovely deep smokey tannins and a 2020 Brown's which has softened to a distinctive but gentle acidity. These should compliment each other well and lend those distinctive PT flavours and characteristics that make it stand out from the rest.

It's been a busy day here on production. This is a fairly new variety called three counties and is grown on the farmcote hill just a couple of miles here in Stanway. Most sugar levels have been down on this years harvest but these are still unusually high and should ferment out to a cider of 7.5 - 8% abv!
Making hay while the sun shines is the saying.
But it was much more of a case of making cider before the sun rise in Stanway this morning!
Toby's putting in some long shifts in the cider barn to get the fruit pressed while it's at its best.
A very wet day spent out in the orchards harvesting Newton wonder yesterday. This variety makes up a key part of our medium dry blend so justifies the extra labour involved in harvesting. And as much of the orchards local to Stanway were hit by late frosts we have travelled a little further to North Littleton to collect these.
It's a vintage kind of day here in Stanway. These are the apples that will make up our vintage blend cider and are given the honour of vintage variety status as they all have outstanding qualities in cider production. Some of these include Yarlington mill, Somerset redstreak, Major, Dabinett & Kingston black.
