Next in the traders Spotlight for this year’s festival is La Poutine Poutine is a dish created in Quebec in the 1950's consisting of fries (chips), squeaky cheddar cheese curds and piping hot gravy. The word "poutine" means "mess" in old French slang. This team bring this traditional dish to the festival using fresh, organic and handmade ingredients.
