A little bit of Spain in the Pennines! We'd like to thank all past customers and especially for the messages of goodwill.
The Tapas Bar was open for fifteen years and during that time, our food and drink offerings developed considerably, but we finally decided that it was time for a change. We're going to keep this page open to let you know about future developments including our new website Foods of Spain (www.foodsofspain.co.uk) and a series of tapas-related books that we're producing, so please do watch this space.

It’s a pure coincidence, though perhaps a happy one, that my latest book has been published on World Book Day!
Vegetarian Tapas has recipes for lacto-vegetarians, ovo-vegetarians, and vegans and with over 50 recipes including sauces and salsas, it is illustrated throughout in full colour. Of course, you don’t need to be vegetarian to enjoy these delicious and healthy tapas.

Today is Pancake Day in the UK and a few other places – are you celebrating?
Of course, in the religious calendar, it’s Shrove Tuesday, the last day before the fasting days of Lent and a good reason to use up any eggs and fats.
In Spain, they don’t have a pancake day, but they do have pancakes, frisuelos, which can be enjoyed at any time.
A Galician version is Filloas, which as well as a sweet version, may be made with meat broth and cooked in pork fat.
Frisuelos
100g/⅔cup of plain (all-purpose) flour
2 large free-range eggs
250ml/1cup of milk
1 tbsp sugar
pinch of sea salt
1 tbsp of brandy or anis (optional)
Olive oil or butter for frying
Caster sugar to sprinkle
With a hand or electric whisk, blend the eggs and sugar.
Add the milk, salt and brandy or anis, if using and continue to mix.
Add the flour a little at a time and whisk until the mixture is smooth.
Allow to rest for at least thirty minutes.
Add a little oil or melted butter to a frying pan and use kitchen paper to coat the surface.
Heat the pan and add a small ladle of the mixture, covering the base to create a thin layer.
Cook for around thirty seconds to a minute, then flip.
When cooked, remove from the pan, sprinkle with sugar and serve.
