Did you know?

The history of meat preservation is long and spans thousands of years and many different cultures. In Mesopotamia around 3000 BC, it was recorded that meat and fish were preserved in sesame oil, dried and salted in order to store them for when food was scarce. By 200 BC, salt curing was common in Greece and popular in the Roman Empire. Significant advancement was made by the nineteenth century to refine preserving cured meat.
Meat preservation has changed over time with the development of new technologies and methods. In the past, people used methods such as drying, salting, and smoking to preserve meat. With the advent of refrigeration, meat preservation became more efficient and allowed for longer storage times while maintaining product safety and quality. Other methods such as canning, fermenting, irradiation, and vacuum packaging have also been developed to preserve meat.

King prawn linguine. Stir fried some sliced king prawns with garlic, chilli, white wine, black pepper and a little bit of tomato. Tossed the cooked linguine through it with a little of the pasta water to keep it moist. Drizzled with some extra virgin olive oil and more fresh parsley to finish.

Tonight's dinner, porcini mushroom risotto. Sauteed some home cured, smoked pancetta with fresh mushrooms and porcini. Added chicken stock and white wine and finished with parmesan cheese and butter.

Spaghetti ai Gamberi, one of my favourite southern Italian dishes.
I used Argentinian pink shrimp, which are juicy and firm.
Cooked in olive oil with garlic, parsley, white wine, a touch of tomato and chili.

Unfortunately, due to the amount of orders currently being either rejected and returned to us, or subjected to unreasonable import taxes by customs authorities in many EU countries, we have been forced to suspend shipments to all EU countries until a solution has been found.
I'm so sorry, but this is one of the unfortunate backlashes of BREXIT.
We hope to be able to re-instate the EU service as soon as possible.

Seared sea bass fillet, with king prawns and scallops that have been poached in a garlic and caper beurre noisette. Served with sourdough bruschetta topped with baby plum tomatoes tossed in olive oil and basil and finished with a dill flower-top. , hope you've eaten 😁

Just taken a couple of these beauties out of the smoker. Cured for 10 days with our Molasses Bacon Cure, then smoked for 20 hours over a mixture of Cherry, Juniper and Olive wood dust.
Beautiful colour and smells amazing.

Arancini di riso
Traditionally made from leftover risotto and stuffed with a little ball of mozzarella, breacrumbed and deep fried.
"Arancini" translates to "little oranges"
My nonna in Amalfi used to make these when I when I came to visit. There was always a little basil leaf in the middle of each one, giving a little burst of extra loveliness

Honouring the anniversary of D-Day today. Tonight's dinner is a proper British Fish, Chips and Mushy Peas.
During the landings, British soldiers identified themselves at night time to others in the darkness by shouting words that only other British soldiers would understand. One such was the word "Fish", to which the friendly response would be "Chips". This nation's favourite saved lives, and we are forever grateful.
Praise the fallen, we will always remember them. X

A pork fillet, cured with our Chorizo sausage seasoning, I've added some of our Prague Powder #2 and increased the seasoning to bring the salt level up to around 2% so that it can be air dried.
After curing, this was cold smoked with apple and oak and then air dried for a few weeks until it lost 35% of its original weight.
Pork fillet is a VERY forgiving cut of meat for anyone wanting to try air dried meat curing for the first time.
