Well this Saturday im going to be cooking an interesting, tasty 4 course menu where I'll be showcasing my research from my travels down from Mexico to Colombia when I was doing research/eating my way around/trying as much as possible and learning a colourful plethorabof fantastic cuisines.....with some sympathetic crossovers and fascinating differences.

**SAT' 2ND OF DEC' - CENTRAL AMERICN SUPPER CLUB**

Nearly sold out! Last handful of tickets left for you to grab. I'm excited to host ma next Supper Club, after a short hiatus whilst enjoying pursuing other catering avenues; charity work, batch cooking, teaching Food Preparation & Nutrition.

Next Saturday I'll be Southside at the beautifully formed in leafy Hale and Altrincham. 6:30pm start for ya best night out this year!

Pictured here is one of the hardest and most incredible hikes I've ever done; climbing up Acatenango Volcano close to Antigua in Guatemala, where I spent a lot of time. Including my birthday (next picture), driving up to the beautiful luscious jungle above Semuc Champey - full of turquoise pools and caves.

Oooooh the memories! Here's some more pics from ma travels down through Central America. These in particular are of ma time spent in Colombia. Such a huge, magnificent country, which such diverse landscape and cuisine.

**FREEDOM FROM TORTURE - THE GREAT STREET FEAST MCR - 23RD OF NOV'**

Not too long now.....till I'm cooking alongside these lovely female chefs that I admire and feel honoured to be a part of what's set to be a fabulous evening of gourmet street food from around the world and stand-up comedy whilst raising vital funds for survivors of torture.

is an incredible charity that supports torture victims. They've been operating for over 30 years....healing and protecting torture survivors.

All 6 of us Chefs will be cooking a tasty dish each with wine from the specialists

Maravilha, a torture survivor, Chef and advocate, who will be creating traditional Congolese dishes from her homeland,

Fellow Mancunian, smiley from ,

Brazilian Chef from and Great British Menu acclaim,

bringing traditional Sri Lankan food with a modern twist,

myself with a big smile and a warm heart, serving up something sumptuous to impress.

Ngwafu Tansie from who'll be treating us to a West African dessert.

After dinner, there'll be two stand-up comedians making us laugh with their witty sets.

You'll also be able to peruse the Gift Shop, full of items made by survivors, and you can try your luck in the Silent Auction, where some fabulous prizes are on offer.

**CENTRAL AMERICA PART DOS**

I spent 6 weeks travelling solo around the beautiful, huge country of Guatemala during my tour down through Central America. Such diverse landscape....and produce grown, making quite an interesting cuisine.

**CENTRAL AMERICA PART UNO**

I spent 3 and a half glorious months solo travelling down through Central America back in 2018. I ate an abundance of weird and wonderful delights, did cooking courses, ate where the locals ate, cooked for people in hostels, relished in food markets, side street taco carts.....tripe tacos!

I came back and enjoyed sharing my research, showing off ma favourite new finds.

**BATCH COOKING FOR EATWELL MCR**

Was an absolute honour and a privilege to have helped to prepare hundreds of healthy meals for the lovely ladies at to distribute to Manchester’s frontline hospitals, shelters and refuges.

The friendly volunteers and the generous folk at made it a breeze...and fun!

Hope to do more and help feed more folk that aren't as fortunate as most.

**SUPPHER COLLAB WAS A HIT!**

Ma first ever club night......and 's too.....was soooo much fun!

Dancing for charity....what's not to love.

As if we're doing a sponsored disco at school.....and we get sponsorship money from everyone on our street......but instead....it's a 20 quid ticket and a hearty supper's included to line ya stomach before spending the preceding hours on and off the dancefloor throwing some crazy shapes to the excellent songs selected on the decks.

Christmas danceathon date TBA! Sure to be a sell out.....filled with smiley faces and a joyful vibe.

**MA FIRST CLUB NIGHT! SAT 21st OCT'**

I'm proudly collabing with a bunch of lovely women on creating a night of dancing, merriment......and eating (of course)....in aid of a very worthy women's charity.

have been providing food, clothing and other items to women in need and their families for around ten years!

are hosting this night of dancing, which is their first.....they typically run Supper Clubs with female chefs with profits going to different women's charities.

I'll be serving up Supper...

Stalybridge has another decent restaurant!

16 seats so be sure to book.Giuseppe's an intimate Sicilian restaurant serving up small plates and pizzas.

We had the Special.....Slow-Braised Beef Cheek with Parmesan, Polenta and Crispy Leeks....Sat in a rich, deep, dark jus.

Also the Sicilian Sausage over Crispy, Fried Potatoes and Herb Oil.

doing Palestinian brunch and lunch well....is the other place worth visiting.

I reckon with the £8 million funding to redevelop Staly Vegas.....it'll be buzzin' in years to come.

I was chuffed that I was able to offer 32 meals to the very lovely people of to distribute to very worthy folk across the city.

Mexican Slow-Braised Pork Shoulder Al Pastor with Diced Potatoes, Chipotle Beans and Elotes.

I'm going to be back down in Bristol, serving up a delicious four course Eastern Mediterranean delight in a special Supper Club, on Tuesday the 22nd of August. £40 p/p.
