Sheryl Chiu-Sosnov, the energy and inspiration behind Hot Chiu, is not only a highly imaginative, creative cook but also a successful graphic designer. This means, it’s never enough that her sauces and recipes are taste-bud tempting – they have to be equally easy on the eye! She’s never happier than when conjuring culinary delights for family, friends and colleagues and revelling in the expression
s on the faces of the lucky recipients. She’s always been an instinctive and intuitive chef, but only with the launch of Hot Chiu and demand for her recipes, did it dawn that telling people to throw in a little of this, a pinch of that and a lot more of the other, didn’t work smoothly for everyone – hence her now writing down some of her delicious concoctions, so the rest of us can join in. She puts her food fascination down to her upbringing in the Phillippines by Chinese parents who, in true Asian style, set huge store by hospitality - and how better to express that, than by cooking up a storm. She grew up relishing the regular and gloriously satisfying affairs that were Sunday suppers at her grandma’s. Here, traditional Fujianese dishes, handed down through the generations, were served to riotous, highly appreciative gatherings with lots of love and laughter. The magical childhood memories of family feasts are the foundations on which Sheryl has evolved her own repertoire, for her family and others to relish and make their own memories. She’s put her unique spin on traditional Chinese recipes by adding techniques, ingredients and ideas, gathered over her last twenty years of living in the US and Europe. Hot Chiu condiments are family-friendly, certainly not too spicy for the kids, and help children evolve their own appreciation of different food tastes, sensations and textures. A firm believer in healthy eating, Sheryl’s never seen any reason at all why this should, in any way interfere with the fun or enjoyment. She points out that Chinese recipes, created for Western palates can be way too over-enthusiastic in their use of sugar and salt to add flavour, whilst Hot Chiu takes you right back to the traditional use of Asian condiments, a perfect balance of sweet, sour, salty and spicy. As you’ll have gathered, Sheryl’s not a happy lady unless all the right boxes are ticked, so standards in the Hot Chiu kitchen are sky-high. Oddly enough, when she’s not busy working at cooking and feeding others, her relaxation is cooking and feeding others – go figure!
