It’s all about edible flowers this month - cowslips, wild garlic, magnolia and cuckoo flower are making some very pretty meals! Where else can you get healthy homegrown meals like this in such tranquil Welsh surroundings? It feels like summer here at the moment - and it’s available this weekend if you feel like a change of gear ;-)

Courgette (aka zucchini) is the brunch-time star at in Wales this week. Here’s some Scottish tattie scones with beetroot, grilled tomatoes, caramelised onion and courgette. The courgette flower itself is edible as are the tasty leaves used here - waste nothing! Served with lemony beans and all fresh from the garden.
There’s one weekend of summer to go and the scenery is very colourful - PM if you’d like a tasty Welsh escape :)

Last week I started selling iris flowers from Robins Realm, now it’s fresh veg!* I’m extremely chuffed about this considering three years ago I could barely grow a spring onion! Here’s the backstory..
Mum came around early in lockdown 2020 and said “son, it’s time to fu***ng start gardening!” and marshalled our renegade team into action building raised beds, erecting a greenhouse and begging for horse s**t! Annie Wealleans was delighted with our efforts and even prouder when I smuggled her a meal made with my own veg a few months later. For six months of the year I can now easily eat really well on a tenner a week.
Sadly she did not quite make it to the next season so this was her last major guidance to me - and what a thing to share it was. In fact it’s about the most useful thing you can teach a vegan with the metabolism and energy of an 8yr old!
I’m sure she would be gobsmacked that I’ve now got too many goodies and am selling it via the excellent wholefood shop of an old friend in Llandovery. Currently there’s an abundance of giant spinach, curvy courgettes and rainbow chard on offer. Go check out Iecyd Da which is of course Welsh for good health - and thanks to Mumsie, I’ve never been healthier! X

This one is for my homies in Wales! If all goes to plan we should have three things to celebrate this weekend:
1) Wales should win the Six Nations on Friday - shout for Scotland!
2) The clocks go back on Sat night giving us all some more daylight, summer is officially underway!
3) Welsh* people are allowed to book self-catered cottages (with their household) within Wales.

So do any of you lovelies need an affordable break? I know it’s been a rubbish year for almost all of us but here there is some freedom, great walks, bleating lambs and plenty of stars.
There’s a cottage or a farmhouse and both have their own hot tub, acres of garden and tons of period details.
The only rule is that it’s strictly a veggie house.

* for those of you outside this glorious country, you’re officially allowed to stay from April 12th if all goes to plan. I don’t make the rules!

After a long day of hard manual labour (this place doesn’t run itself!) I thought I’d treat myself to something a bit special. Ladies and gentlemen I give you a roast butternut and swede bake with roast parsnips, brussels sprouts, a rainbow salad and my current favourite homemade beetroot mayo. Fools will tell you that being vegan is expensive. Not if you learn to cook - this yummy meal fed four people for two days and cost three quid!
Veg stir fried rice with sweet potato tempura, sweet chilli and soy sauce. Only took half an hour to cook too, simples!
