I am delighted to be able to share my sweet and savoury bakes which reflects my Norwegian heritage.
Enjoying my home made knekkebrød (Norwegian crispbreads) with hummus and black olives - perfect for a light lunch. Vegan and gluten free. Keeps for months in the heat sealed pack, these ones are left over from a Christmas batch and taste great 😋😋

Thanks to all my customer friends who have supported me over the year. All Christmas orders collected and now time for me to relax and do very little for the next two weeks!!

Last hamper being made up for collection this afternoon. This is a standard hamper with rum mince pies, Julebrød Norwegian Christmas bread, two types of cookies and a pack of kransekake.
So many mince pies to make, it’s like a conveyor belt to get everyone’s orders done, packed and collected every day until Christmas Eve. Extra rum in this batch 🧑🍳

Freezes really well wrapped in greasepeood paper and popped into a freezer bag.
Finished most of the prep., for the Stollen’s to make things go seamlessly later today. Just have the creme d’almand to make which I’ll do this afternoon which is spread on each stollen before the marzipan and fruits are added. I’ve increased the fruits and cherries by 50% this year 😋😋🧑🍳
Last Stollen dough coming together, this will have a first prove of 4-5 hours and then a second prove of 2-3 hours. Setting it now means that the Stollen’s will be baked around 7pm this evening, and then will be bathed in rum butter before being covered with icing sugar.
I’ve had quite a few orders for dairy free and vegan cinnamon buns this week. Last batch of vegan cinnamon buns being started now for collection tomorrow ready for the customer’s freezer! Buying a batch is really good value saving up to £14 on some bakes compared with buying them individually 👍🧑🍳
Last call for Christmas bakes - order book will close tomorrow at 4pm. Collection still available up to and including Christmas Eve 🎄

I will not be attending tomorrow’s Corsham Creative Market
due to continuing ill health. All customers with pre-orders have been contacted. I will aim to have a baking weekend once I’m on the mend so you can all get your Christmas goodies.
My last market for 2023 will be Corsham Creative Market on 2nd December at Springfield Campus 11:00- 15:00

Really sorry to disappoint my customers
Making ‘verdens beste pepperkaker’ Trines matblogg - gingerbread so that I can make reindeer, gingerbread people and trees for Lowden Garden Centre Christmas Market Fri-Sun next week. I’ve just put the melted syrup and sugar with all the spices and bicarb over 250g very cold butter and letting the machine do the hard work of stirring until it is cold. Then eggs will be added before flour. The dough will go in the fridge for a few days so the flavours can develop before using.
I’m making a new bun for Lowden Garden Centre Christmas Market - a Christmas bun which will look like a cinnamon bun (photo) The filling is cinnamon, ginger, cloves, cardamom and orange zest, I’ll use dark soft sugar and of course butter!! Can you imagine the aroma 🥰
I’ll also have Julebrød buns, Norwegian christmas bread with cardamom and raisins which is a firm favourite with customers. Enjoy with meats/cheese or toasted with butter and a red jam!! Shown in photo below back left.
All buns freeze really well, defrost at room temperature and warm through before serving.

I am of Norwegian descent on my mother's side and have spent time living and working in Oslo. I have always loved all things Norwegian, particularly the baked goods!
As I have always been a keen home baker, it seemed like a good idea to combine my two passions - and so Becky's Bakeri was born.
I now sell my Norwegian goodies at events in and around Wiltshire and Gloucestershire; I also take orders by phone.
