Coincidence, Collaboration and Coffee

Highfields Coffee was created in 2017 by three unlikely friends from Colombia, Portugal and America. The long version begins when Carlos Campos met Marco Oliveira at a seminar in London and the two immediately discovered a mutual love for all things coffee. Carlos was passionate and practical, having grown up in Colombia in the local coffee farming community

Late harvest coffee

With “late harvest” the cherries are left on the coffee plant after they have actually become ripe. The sugar contains in the pulp enters the kernel via osmosis to give the coffee a marked sweetness. In addition, most cherries are affected by noble rot which breaks down long-chain sugars (di- and monosaccharides) with a high sugar content to give the coffee an even sweeter taste.
