I have worked as a chef since the age of 12 and one thing I’ve learnt is the importance of fresh food which is rare in the restaurant business because it’s just not possible ! The customers want their food pretty much straightaway !
As a chef I can tell you that when you eat in a restaurant nothing is fresh! Unless specified in their policy !! Freshness is the new thing because we are more aware of what we put in our body and rightly so !!
Stock is either frozen or kept in the fridge, curry sauces / masala are frozen or in the fridge for at least three days .., all this knowledge behind the scenes of a kitchen has basically put me off eating outside !! So I only have coffee or pizza ( if freshly made) otherwise you would never see me have a take away anywhere unless I know the chef personally and that they will cook from scratch for me !! I’m very careful and just enjoy the authentic taste in cooking from fresh ingredients ! There is nothing like it ! I never use tin food or tin tomatoes etc. I avoid ready made sauces ( I make my own ), so I take no short cuts ! The rise in bowel cancer is because of such toxins absorbed in our body .. I like the traditional way of cooking and the methods and till this day love the way my mum cooks ..,over the fire 📷 in my videos when I go Nepal you will see how I cook the traditional Nepalese way over the fire .
Cooking is an art. Certain spices and ingredients have to be added in the food at certain times as it makes a difference in the taste .
