Fresh Australian Black Winter Truffles have a dark Gleba (marbled interior) and a deeply intense aroma and flavour. Making them the most prized by Michelin chefs for their incredible taste and aroma. This variety of fresh truffle bring a huge depth of flavour and umami hit, and are amongst the best, strongest and most truffley variety of fresh truffle.
These Black Winter Truffles are sourced from the world-renowned truffle paradise near Manjimup, Western Australia, grown during their winter time. Resulting in the world’s best truffles being available to us in the UK between June and September.
Black Winter Truffles have a complex and deep flavour profile, with notes of heavy mushroom, chocolate, liquorice, and strawberries. Because of this, they are hugely versatile and pair incredibly well with any savoury, dairy, or starch based dish.
Our long-term partner there has 264 acres of Truffiere, boasting an incredible 17,000 trees within their own microclimate. This results in super-fertile soils and, unlike many other producers in the region; a naturally water rich eco-system. They are the first producer to adopt a holistic approach to Regenerative Farming, focusing on soil health and the benefits to the trees – ultimately resulting in more aromatic truffles!

A warm autumn has delayed the start of the Black Winter Truffle season, but with winter firmly set in, and truffles ripening nicely, we will be receiving our first shipments of these later next week.
Until we reach peak season, supply is always limited initially, so: home cooks - please place your preorders online. Or get in touch directly if you are a chef or restaurant ASAP.
They are the same variety as European winter truffles (tuber Melanosporum - aka “Périgord”), but with inverted seasons in the southern hemisphere, we get to enjoy them in both our winter and our summer!
Certainly the most complex and aromatic of all black truffles, it will be an exciting season and I cannot wait to see what dishes and flavour combinations all our amazing customers come up with.

Italian Black Summer Truffles will be in stock from Wednesday next week. Having been around for a few weeks already, they have been too mild until now. They have a wonderful nutty aroma. Think hazelnuts and butter. The mildest and most subtle of all truffle variety they are best used liberally, and bring a wonderful raw mushroom bite.
Italian White Spring Truffles (tuber Borchii / aka “Bianchetto”) - The smaller cousin of the famous White Winter Truffles (aka Alba) are available this week.
Despite being small, they have a lovely garlic note and a heady, medium aroma, similar to the white winters. “Bianchetto” translates as “whiteish” and they can vary in colour from yellowy beige, to chocolate brown.

We will soon be supplying 1st Class truffles hunted wild, from 3 counties in the UK, as well as from our existing partners in Tuscany, Italy.
Providence and traceability is super important to us, and increasingly customers want to know exactly where their food is coming from. All of our truffles are traceable and hunted sustainably, using the brilliance of trained dogs and the endurance (and perseverance) of dedicated hunters.
We won’t be supplying them until they are ripe so we are likely a few weeks away from launching this new offering - both WHOLESALE to Chefs 👨🍳, and via our online shop to HOME COOKS 🎁.
