allan’s birthday chocolate loaf cake 🍫🤎

this weekend I had the absolute pleasure of making my good friend allan’s birthday cake. I say friend, but really allan is family in every way but blood and I hold him dear to me - so, it was truly so lovely to be able to make his birthday cake for him 🤎

I made allan a simple chocolate loaf cake with a recipe from and topped it with vanilla buttercream, some chocolate stars and some long silver candles! 🍫

i really loved making this cake and I think allan was pretty happy with it too 🤎

ginger and caramel blondies 👩🏻‍🍳🤎

hello darlings! i hope you’re all having a good start to the week?! yesterday i baked ginger and caramel blondies and enjoyed every second of it! i combined the ideas of ’s basic blondie recipe with ’s gingerbread and caramel white chocolate blondie recipe and made what I can only assume to be one of the most enjoyed bakes I’ve ever made - satisfying groans all round. the combination of these flavours result in a sweet, creamy and warming bite every time! i also topped the blondies with gingerbread men to tie them all together 👩🏻‍🍳🤎

brandy and clementine mince pies 🎄

the holidays are coming and this week I made my first batch of mince pies for my good friends allan and netty! I’m not a fan of mince pies myself but the tradition of baking them always puts me in the festive spirit 🤎

I used ’s recipe to make these but used ’s brandy and clementine ready-made mince meat to fill them (the smell of mincemeat repulses me a little so I didn’t feel too good about making it from scratch, haha) 🎄

s’mores brownies 🍫🎇

happy bonfire night angels! whether you’re sat in with a cup of hot choccy or out an about in the autumn air watching the sky come to life, I hope you’ve all had a lovely sunday. for this weeks bake I made s’mores brownies - personally, my most anticipated bake this festive season 🎇

the main element of these brownies, were, of course, the brownies, and I used the trusty recipe by to make them. however, before putting the brownie batter into the baking tin, I combined crushed digestives, cinnamon and unsalted butter to make a graham-cracker-type crumb for the brownie batter to sit on! to finesse the s’mores feel to these brownies I also used vegan marshmallows to top the brownies and roasted them for a minute or so until golden to give that sweet and smoky camp-fire-roasted taste to the bake! 🍫

chocolate and cherry mummy madeleines 👩🏻‍🍳🤎

happy halloween to those of you who celebrate! I have been less into the spooky season this year, but couldn’t let it pass without at least dedicating a bake to it…they are the most fun after all! 👩🏻‍🍳

let me tell you, I was running on an idea, sugar eyes and a dream when making these. as some of you might know, the process involved in baking madeleines is to remove them out of their tray milliseconds (or less) after being in the oven and if you happen to take a second to breathe instead of getting them out they’ll stick to the pan - I’m telling you this story because this happened to me for the first time ever, which meant I lost a whole batch of madeleines…annoying, but, I still remained triumphant with six of these delectable little mummy madeleines 🤎

I used the trusted recipe by for the basic madeleine batter but replaced 25g of plain flour with cocoa powder to make them chocolatey! I also stuffed the madeleines with a cherry curd before decorating them with melted white chocolate and sugar eye decorations 👩🏻‍🍳

pumpkin spice cupcakes 🧁🎃

it’s official: it’s big coat season. which means my spice rack is out in full force to make the most warming bakes I can. this week I made pumpkin spice cupcakes. I crafted my own pumpkin spice mix with cinnamon, ginger, nutmeg, all spice and cloves and then added a generous spoonful in to a basic sponge mix (courtesy of a recipe) 🧁

to top the cupcakes I used a vanilla cream cheese frosting and sprinkled them with some more pumpkin spice (can you really have too much?). these cupcakes were tantalisingly warm, delectably soft and paired with a smooth cream cheese frosting - they were also ridiculously moreish (seriously). are you diving into the world of pumpkin spice this fall? 🎃

caramilk cookies 🍪

happy monday angels! this weekend I baked caramilk cookies - I haven’t used blonde chocolate a lot in my bakes so I thought it was high time i incorporated it! 🤎

I based this recipe off ’s nyc cookies but adapted it to include 300g of taste the difference blonde chocolate chips and 100g caramilk chunks! 🍪

these cookies are soft, velvety and packed with golden caramelly goodness. a winner as far as my office is concerned anyhow 🤎

apple oat cinnamon streusel muffins 🍏🍂

autumn is looming, the leaves are beginning to fall and my kitchen consistently smells of cinnamon and mixed spice - what more could you ask for? 🍂

this weekend I made apple oat streusel muffins - a combination of apple crumble and muffins…sorta? I used a recipe by for these muffins and it really did not disappoint! the sponge was fluffy and moist and had a decadent cinnamon oat streusel topping 🍏

a small alteration I made was to use mixed spice instead of nutmeg on its own - I wanted them to have a more well-rounded festive flavour, so used a combination of cloves, nutmeg, ginger, coriander seeds, dill seeds and cinnamon 🍂

salted caramel millionaires shortbread 🥨🍫

hello darlings! let me introduce to you the best thing I’ve ever baked - this might be an exaggeration…probably not. these are millionaires shortbread with a salted caramel filling, topped with swirled milk and dark chocolate, salted pretzels and billionaires mix! 🥨

I used ’s recipe for these but put my own little pretzely spin on them (I thought they also looked a little autumnal - tis the season). the shortbread and caramel are both gloriously smooth and soft and the mix of milk and dark chocolate and salty pretzels evens out what could’ve been a sickly sweet bake! 🍫

last week I had the pleasure of making cupcakes for one of my friends, friends engagement! she wanted a simple vanilla cupcake and I was more than happy to jazz them up with an elegant rose buttercream and sugar flowers from 🧁

I used ’s recipe for these cupcakes and, as always, they didn’t disappoint! soft sponge paired with a beautifully buttery vanilla frosting = a delicate and tasty engagement gift 💍

banana bread 🍌

the spring of 2020 had a really good go at rebranding banana bread as a spring bake, but I’m here to reinstate its belonging to autumn. with an added tsp of cinnamon, banana bread can transform any kitchen into an autumn grotto. the warmth, spice and homeliness of this bake exudes autumn and I will argue that until my dying day 🍂

I combined ’s chocolate chip banana bread recipe with another recipe from to make this banana bread - taking the best parts of each to make these lovely little 1lb loaves. these were soft, moist, delicately spiced and had a beautiful balance of banana 🍌

cinnamon blondies 🍁

happy september lovelies. although it doesn’t feel like autumn is in the air currently, I am very eager to fast forward to crisp october nights and spooky season - so, in that eagerness I decided to start autumn baking, and first up are cinnamon blondies 🧡

I used ’s recipe for these from her second book, celebrate! these blondies were soft, chewy (in the best way) and had a beautiful balance of warm cinnamon and smooth white chocolate. the recipe was incredibly easy to follow and fun to craft - I’d highly recommend making them to kickstart your own spooky season 🍁

smarties cookies 🍪

guess who’s back? back again. treats by tam, tell your friends 🤎

happy bank holiday monday you beautiful bunch! I am so, so, so excited to say that I am finally back in the baking world! after a long transitionary period, I have comfortably settled into my new apartment/kitchen/town/job/life and decided that this weekend was the weekend I’d start baking again 🍪

I made a batch of smarties cookies for my friends and I to snack on at our pub quiz yesterday evening (which we won, might I add!). these cookies were chunky, chewy and chocolatey - the forever desired three c’s - and were packed (and I mean packed) with smarties. I used a recipe by which was so easy to follow and produced some absolutely perfect cookies! 🤎

I’d definitely recommend making these if you’re looking for something simple, fun and family-friendly to bake this bank holiday monday 🍪

thankyou all again for being so patient with me while I started this exciting new chapter in my life. I have appreciated every message and well-wish while I’ve been away - I truly don’t deserve you all! I can’t wait to carry on our little baking adventure and start posting more regularly again! carla’s birthday brownie stack 🍫

this week I had the absolute joy of crafting this inspired brownie stack for my best friends daughter, carla. carla is an absolute gem of a human so I wanted to go all out for her birthday - and, I think I might have done exactly that! 🤎

I used ’s trusty triple chocolate brownie recipe for the brownies and then decorated them with kinder hippos, buenos and snack bars - I also added some milky bar buttons and drizzle to pull it all together! 🍫

Ive wanted to make a brownie stack for ages and I was honestly so excited to make this! you should probably expect more stackable bakes on this page because I am obsessed with making these already, haha 🤎

this week I had the absolute pleasure of making my friends boyfriend his birthday flapjacks! he’s not necessarily a lover of cake but does enjoy a flapjack, so it only seemed appropriate to make him these chocolate topped flapjacks 🍫

I actually used my own flapjack recipe to make these beauties! they were so chunky, soft and easy to make and I hope that they are well enjoyed by the birthday boy and his friends and family. thankyou again for asking me to do these 🤎

vanilla and raspberry jam cupcakes 🧁

this week it was my managers last shift with us before she moves away and I wanted to make her a little something sweet as a leaving gift! I thought these vanilla and raspberry jam core cupcakes were the perfect little concoction to be just that! 🤍

I used a simple vanilla cupcake recipe by to make the sponges, filled them with a juicy raspberry jam from bracken hill yorkshire preserves and topped them with soft vanilla buttercream roses and pink sprinkles I bought from 🧁

these were so soft and spongey - and, with a gloriously punchy pocket of raspberry jam balanced beautifully by a buttery vanilla buttercream these are a perfect summer bake for all your coronation/eurovision/just-because-it’s-the-weekend parties and bbq’s! 🤍

bakewell tart shortbread bars 🍒

so I’ve been seeing these absolutely delectable looking cookie sticks on my explore page and I really wanted to have a go at crafting my own version. hence, bakewell tart shortbread bars! 🤎

did the finished result look nearly as pretty and aesthetic those I’ve seen on my Instagram? not in the slightest - but, they tasted absolutely delicious! using a basic shortbread recipe from and adding chopped glacé cherries, almond extract and ground almonds, these shortbread bars are perfectly reminiscent of that beautiful bakewell tart flavour! I also decided to dip them in white chocolate for that extra bit of balance against their punchy almond flavour! 🍒

raspberry crumble bars! 🌾

hello guys! I hope you have all had a lovely week and have been enjoying the weather as best you can! 🤎

this week I really fancied making something I’d never done before and something that gave that summer fruits vibe - these seemed like a pretty perfect combination of both 🌾

like a glorious mixture of winter and summer, these crumble bars exude the coziness of winter with a brown sugar + oat crumble base and a tart, juicy, raspberry filling. I used a recipe by to make these bars and found it exceptionally easy to follow! 🤎

white chocolate scones (served with blueberry jam) 🫐

happy sunday you lovely lot! todays post is white chocolate scones that I decided to pair with some absolutely delicious blueberry jam and honestly they are a match made in heaven! 🤍

I used a janes patisserie recipe for the scones and as always her recipe did not fail me - they came out perfect! they had such a good rise, and classic top and a fluffy middle, with pockets of slightly melted, soft white chocolate chunks from M&S (because I have to say, they do do the best chocolate chunks!) I also picked up some beautiful
blueberry jam from bracken hill Yorkshire from my trip in whitby that I just had to pair with these! all in all these were so ridiculously tasty and very moreish! 🫐

I was meant to film these as a YouTube video for you all but I was feeling a little under the weather so I opted for a reel instead which is up now! I really hope you like the look of these. have a good week! 🤍

introducing: hot cross cupcakes! 🧁🐣

this is my first recipe in a while and I’m so excited to share it with you! these are absolutely delicious hot cross cupcakes! inspired by the hot cross bun, these cupcakes are lightly spiced with a smattering of sultanas, an apricot glaze and topped with a marzipan cross (think hot cross bun x simnel cake). they are a soft, moist and delectable display of traditional easter baking brought to modernity! 🤎

ingredients:
- 150g golden caster sugar
- 150g unsalted butter (I used stork)
- 3 medium eggs/150g eggs
- 150 self raising flour
- 1 1/2 tsp mixed spice
- zest of 1 orange
- 100g sultanas
- 4 tbsp apricot jam
- 100g marzipan

method:
1. preheat your oven to 160 degrees and pop 12 cupcake cases into a 12-hole cupcake tin
2. beat together your butter and sugar until creamy
3. add your eggs and beat again until combined
4. add your self-raising flour, mixed spice, sultanas and orange zest and then beat again until well combined (this doesn’t take long, try not to over-beat)
5. spoon your mixture into the cupcake cases (these cupcakes don’t rise that much so you’ll be ok filling them with just a little space at the top)
6. bake in the oven for 25-30 minutes, (check the cakes using a cake tester toward the end of the bake, ensuring it comes out clean)
7. take the cakes out of the oven and leave in the tin while you prepare the apricot jam
8. take your 4 tbsp of apricot jam and put it in a separate bowl. give the jam a good mix together so that it becomes something akin to a smooth paste.
9. using the back of a spoon or a pastry brush, lightly glaze the top of cupcakes with apricot jam and leave them to cool in the tin for another 10 minutes, before moving them to a cooling rack to finish cooling
10. once cooled, roll your marzipan between two pieces of greaseproof paper until it is a couple of millimetres thick and cut into 24 strips (long enough to cover the diameter of the cupcakes - but don’t worry about precision as you can trim the edges of the marzipan afterward!)
11. place the marzipan on top of the cupcakes in a cross pattern
12. trim any overhanging marzipan off carefully using a knife
13. enjoy! 🐣

these are truly the softest cupcakes and tantalise every tastebud! the perfect easter treat for yourself or to gift friends and family - they’re also super speedy to make if you have an easter party this evening! 🤎

easter blondies 🐣

the next instalment of easter bakes: easter blondies! I made these blondies for my wonderful friends allan and netty for their easter lunch this weekend and I had the best time making them 🤎

for these blondies I used mini eggs, dairy milk eggs and eggs and then added a few extra mini eggs on top of the blondies along with some more smarties in a flower shaped pattern! the flowers were something I saw do on her recent youtube video and I wanted to give them a go myself - although I didn’t take into account the cracking aspect of them when I portioned them…rookie mistake i think they call it, haha 🐣

nonetheless I really loved making and designing these blondies and I hope you love them too! have you made blondies this easter? I hope you’ve all had a ‘good’ friday 🤎

I know it’s a day premature, but, happy easter everyone! I was beginning to think today that easter might just be creeping up to my favourite holiday - the sun starting to greet us for longer in the day with its wavering warmth, pastel colours decorating little treats and niceties, flowers blooming and trees turning green, baby animals leaping in the fields…it seems to give me a boost of hope for the year - does it for any of you? Or am I rambling romanticised nonsense again? 🌼

I digress. this week I made mini egg nyc style cookies for my lovely colleagues. I used the trusty recipe by to make these and they turned out, as always, wonderfully! these cookies are so brimmed with mini eggs you rarely get a mouthful without one embedded in the chunky, soft, melt-in-you-mouth cookie dough! 🍪

malteaster bronuts 🐰🍩

bronuts really had their hay-day last year, but I demand to bring them back because they are simply too delicious not to! inherently simple to bake but exceptionally enjoyable, these bronuts are the perfect bake for easter gatherings, gifts or just for fun (they are very child-friendly too…just in case you needed some plans over the easter period) 🐰

I used the bronut recipe by but decided to coat mine with a white chocolate and vanilla bean glaze and top them with a malteaster bunny! I used dark cooking chocolate for the brownie to give them a really rich chocolatey flavour that was balanced by the delectable 🍫

I made these easter bronuts for my friends at work - and, consensus says, they love them! are you thinking of making these? 🍩

so it’s my first official easter bake of the year and what better way to start than with the simple delicacy that is easter nests. the combination of mini eggs fumes (you know exactly what I mean), childhood nostalgia of bake sales and baking in my dads kitchen at easter, mixed with the first warmth of spring, truly made making these the BEST time 🤎

these are such a perfect little bake, especially if you’re a parent looking for something quick, low maintenance, child friendly and absolutely bloody delicious to make over the easter period! I used the recipe by - simply because it is the best easter nest recipe I have found over the years (and I have made these for a number of years)! 🪺

kinder bueno nyc cookies 🍪

this week I baked kinder bueno nyc cookies! I have wanted to bake these cookies for so long but just never had done, so when one of my colleagues suggested I should make them last week, I knew I had to - and, I’m truly regretting taking so long to get round to them because these were absolutely delicious! 🤎

soft, chunky and absolutely packed with kinder bueno chocolate, these cookies were a true triumph. these were based on a recipe by but i used schoko bons and mini treats as the chocolate! the recipe was so quick, easy and fun to follow - and you can watch me make them or follow along with me using my YouTube video (link in bio)! 🍪
