Yesterday was my annual day out to Cake International the biggest cake show in the world, at the NEC in Birmingham. Accompanied by my mum - official bag minder while I shopped 🛍️ & daughter - official cake sample tester 😋, it’s every cake makers dream where we get to look at lots of fabulous cakes, drool over new gadgets & buy lots of kit we don’t really need! Here’s a few of my favourite competition & display cakes from the day.

This cake was based on one of my previous designs but with a different set of hobbies! The cake was a classic Victoria sponge with favourite chocolate toppings of Maltesers & Twix.

How gorgeous is this pink drip? This cake for a 22nd birthday treat was a large 8” vanilla sponge, with vanilla buttercream & raspberry jam filling. Delicious!

Have you ever tried Red Velvet cake? If you like vanilla AND chocolate this is for you! Also known as the Waldorf Astoria Cake, its recipe is said to have originated in the Waldorf Astoria Hotel in New York, although there are several other theories. Delicious with vanilla buttercream but even better with white chocolate!
