— В посте про тебя было написано, что у тебя многолетний опыт. Расскажи про свой карьерный путь.
— Учился на техника-технолога, работал на кухне с начала практики, с 16 лет. Сейчас у меня более 17 лет опыта. Я работал во многих ресторанах Санкт-Петербурга, постоянно путешествовал и искал новые вкусы для своих блюд.
— Что в твоей жизни было отправной точкой, когда ты понял что хочешь быть шеф-
поваром?
— Захотелось успеха в короткий срок, поставил себе цель и за год стал су-шефом. Следующая цель была стать шефом. Так началась моя карьера шеф-повара.
— Важно ли воображение в твоей работе?
— Обязательно. Фантазия и воображение — это самое главное, без этого ты ничего не придумаешь. Еще важно художество и сноровка. Любое блюдо - это искусство.
— Что сначала возникает в голове: идея подачи, ингредиенты, внешний вид блюда или представление вкуса?
— Сначала ищешь вкус, а потом все остальное.
— Почему именно завтраки, как пришла эта идея?
— Мы приехали в Тбилиси, походили по заведениям и поняли, что не нашли то, что мы хотели бы видеть. С гордостью скажем, что у нас лучшые завтраки.
— Сколько времени заняла подготовка и создание концепции?
— Меню было сделано за 4 часа. Все остальное шло по пути.
— Будет ли меняться меню летом?
— Пусть это будет сюрпризом.
— И последний вопрос. В какие моменты ты чувствуешь себя по настоящему счастливым на работе?
— Когда слышу звуки «мммм» от гостей, которые едят наши блюда.

— Studied to be a technology technician, worked in the kitchen since the beginning of practice, from the age of 16. Now I have more than 17 years of experience. I have worked in many restaurants in St. Petersburg, constantly traveling and looking for new flavors for my dishes.
— What was the starting point in your life when you realized that you wanted to be
a chef?
— I wanted success in a short time, set myself a goal and became a sous chef in a year. The next goal was to become a boss. That's how my career as a chef began.
— Is imagination important in your work?
— Absolutely. Fantasy and imagination are the most important thing, without this you will not come up with anything. Art and skill are also important. Any dish is an art.
— What first arises in your head: the idea of serving, ingredients, the appearance of the dish or the presentation of taste?
— First you look for taste, and then everything else.
— Why breakfast, how did this idea come about?
— We arrived in Tbilisi, walked around the establishments and realized that we had not found what we would like to see. We are proud to say that we have the best breakfasts.
— How long did it take to prepare and create the concept?
— The menu was made in 4 hours. Everything else went along the way.
— Will the menu change in the summer?
— Let it be a surprise.
— And the last question. At what moments do you feel really happy at work?
— When I hear the sounds of "mmmm" from the guests who eat our dishes.
