Africa’s forgotten foods is a subject that is very dear to my heart. On this national Farmer's Day in Ghana 🇬🇭, we celebrate all the amazing farmers who make it possible for us to eat well and are a pillar of our economy. With a cocoa heritage dating back to 1879, Ghana is renowned for the quality and quantity of its cocoa, the main ingredient in chocolate. The traditional method of fermenting cocoa beans in plantain and banana leaves instills a unique flavor, while the country's quality control system provides consistency. We would be nothing without you. Ayeeko!!

Our Afua truffle features prɛkɛsɛ, also know as aidan fruit or Tetrapleura tetraptera, it's botanical name. We love the flavor and how well it pairs with chocolate. But we also love using it because it helps us to promote agricultural biodiversity. Prɛkɛsɛ is at risk of disappearing due to deforestation and galamsy. It is a product highighted by and . Repost After 18 months of tumult, what’s next for the hospitality industry? How can restaurants be a positive force in an ever-shifting world and how should gastronomy respond to the challenges of climate change? Moderated by culinary historian Regula Ysewijn, chefs Daniel Humm, Selassie Atadika, Pía León and Junghyun Park will take the stage to answer these questions and more at : Aftershock, which will take place in Antwerp, Flanders, on Sunday 3rd October as part of The World’s 50 Best Restaurants 2021 events programme, sponsored by S.Pellegrino & Acqua Panna.
The tide-turning events, enforced closures and changes to daily life that characterised much of 2020 and 2021 didn’t just challenge hospitality businesses to reinvent themselves in myriad ways, but also led many chefs and restaurateurs to reassess their practices and seek new, progressive paths. From sustainability and the impact that our eating habits have on the planet to topical questions of authenticity and the amplification of diverse cuisines, and finally the examination of accountability and wellbeing in an industry suffering from a labour shortage – many issues came to the fore on a global level, challenging the industry to improve and change. It is these pressing issues that will be the focus of : Aftershock.
Save the date and make sure to tune in on Sunday, 3rd October at 3pm CET on The World’s 50 Best Restaurants Facebook and YouTube channels to follow live.
