What is coffee really?
Starting with the history of coffee. Continuing with every single thing needed to operate the coffee machine, grinder settings for espresso,how can a barista achieve a good extraction, milk steaming and texturization. It allows one to gain an understanding of coffee itself and set a foundation from which to build practical skills for milk technique and latte art while implementing health and safety practices and customer service.

👍 We train with accelerated and simple techniques yet effective for anyone who wants to gain exceptional knowledge as a Barista.

⚫ Course Description - BREWING SKILLS 🧐

Brewing Skills will take you beyond Espresso making! 😮 Filtered coffee brewing is exciting to experience. This training intends to provide all the important skills and knowledge to make a balanced ⚖ cup of coffee out of different brewing techniques and methods. It is designed for anyone who is passionate 😍 about coffee.

During this course, we emphasize on filter coffee, on the types and origins of coffee, the importance of grinding and water as well as the method we choose for our brewing. Plus, the different filtering techniques and last but not least practice!! 😉

-8 years ago, or maybe more , I don’t exactly remember the date, I was in a seminar and the psychologist asked: what is it that you do and why do you do it ?
I was really young then and although I had that inner fire in me for coffee, I really couldn’t find the words to express it, so I failed. Well now , I think I found them. This is an example of how I feel about coffee. Yes, coffee is just coffee someone will say , or a morning's ritual , or just something we use to keep us awake.
It can also though, bring so many people together, inspire, change lives, create possibilities and accessibility, create hope, be your friend, be your company and that something you will hold on to and will make you smile through the day.
So love and respect you coffee. Love it for what it is, for where it comes from ,for the huge number of people it represents from the start till the end.-

Most of us have seen or tried to save up money to obtain this amazing sensory kit "le nez du café" by Jean Renoir. This kit contains 36 different aromas that offer you a fun way to train your smell and taste. By training our palettes we can define the quality of the numerous coffees that we try. Most of the people in the coffee industry and also us ,as a barista school, strongly believe that in order to grade a coffee our palettes and smell are always the most important judges.Whar about you?
Tasting a coffee takes you back to your past. Taste is memory. If you swipe to the left you will see our collegue, a barista junior, having the first zip of her filter coffee and smiling. A filter coffee with creamy body, notes of caramel and bitter chocolate and a strong finish of strawberry. Cheers !

We all try to be perfect when the time comes to pull our first shot. It's the last move between you and your coffee and the results that you are going to have. The only thing you can control the. Is the extraction time. We all want to see all these beautiful golden colours and lines sliding through the portafilter to out cup and finally taste s sweet and balanced Espresso with delicate acidity and that's just the start. In this photo we can see bring totally focused and waiting for the best result he can get. The espresso was in fact amazing so let's give him the credits. He owns it.💙🧡

If we wanna talk about attention to detail and a high achiever , this guy is the perfect example. Antoniz Vasilakis] a personal trainer who never stops improving his techniques and a home barista with one of the sexiest coffee stations. Him or his girlfriend Stella Gnafaki] will be pulling a balanced shot for you while their amazing cats will be wandering around. A home to whom I am thankful for ( meaning Stella Gnafaki] / Antoniz Vasilakis] and their kittens ) ,have supported me many times and will always be part of our barista school!!
Don't worry, there are no Burpees in our sessions!

Well who doesn't sharing double chemex with their friends? Coffee takes place in so many important times in our lives. Sometimes to encourage us and some others to bring us together. That's one of the things we love the most about coffee. To see the joy that comes just from learning a simple brewing technique such is a double chemex. If brew it with love your palate, heart and mind will smile too. Try us!
