Caldera Coffees
A monthly selection of competition-grade specialty coffee direct from Panama’s highlands
A very important workforce for coffee harvest in all farms in Panama is the Ngobe-Bugle indigenous people, who collect the cherries one by one without tearing the shrub or collecting green cherries. As an encouragement, Auromar pays above-average wages and provides education, literacy, and technical training for adults, as well as after-school activities for their children. Since its inception, Auromar has been committed to improving working and living conditions for its employees 👏👏
NEXT UP: Auromar Firestone Geisha Washed. Back in 2022, Firestone obtained 1st 🥇place in the Best of Panama competition. Flavour profile: Frangipani, Yuzu, Yellow peach, Green tea.
Auromar Catalina Geisha Natural – Purple flower, Tangerine, Tropical fruit 💜🧡
THIS WEEKEND – Brew bar takeover and cupping session at Amauta Coffee Roasters Badalona. Jaime will showcase a curated selection of our 2024 collection. Join Jaime, Ferran, and crew for a sensory journey to the Panama highlands!
Roberto Brenes founded Auromar Estate in 2006 after retiring from a long career in finance. The Auromar Estate is a Brenes-Eleta family initiative, established to produce high-quality Geishas and other premium Arabica coffees in an eco-friendly and sustainable environment.
The cultivated area is designed to balance coffee production with forest conservation. Shade is provided by native tree species and high-altitude Hass avocado trees, creating a stable microclimate with minimal temperature fluctuations.
The coffee cherries benefit from low humidity between December and January and the dry, sunny summer that lasts until mid-April. This combination of forest cover, shade, and late harvest produces limited-supply, highly complex coffee beans each season.
🆕 COMING SOON – Auromar Estate Catalina Geisha Natural
We are thrilled to announce our first collaboration with Auromar Estate! Founded in 2006 by Roberto Brenes, Auromar Estate has consistently graced the top echelons of the Best of Panama competition.

Auromar’s Finca La Aurora is located in Monte Lirio, Piedra Candela in the highlands of Renacimiento, Chiriquí Province, at elevations between 1,570 and 1,770 masl. The Estate spans 30.5 hectares, with 14.5 hectares allocated for coffee cultivation in the lower elevations and the remaining 16 hectares preserved as pristine highland tropical forest.
Finca Jurutungo is located in the Jurutungo region, in the enchanting Piedra Candela area of Renacimiento, Chiriquí province, Panamá. Piedra Candela roughly translates as 'fiery or flaming stone,' a clear reference to its volcanic location.
At 1,600 meters above sea level, Finca Jurutungo is surrounded by pristine nature. Nestled in volcanic soil and virgin forests, the area is bathed by Pacific and Atlantic winds and rain, all of which contribute to the unique flavour profile of the coffee grown here.
Our second lot comes from Finca Jurutungo, a fermented Geisha Natural. Flavour profile: Mulberry, Mangosteen, and Dark chocolate. 🖤💜🤎
The Gallardo family has been dedicated to cultivating coffee in Jurutungo, Renacimiento region since 1960, passing down their expertise through generations. Finca Jurutungo is lovingly managed by sisters Damaris and Dafsne Gallardo, daughters of founder Jose Manuel Gallardo.
This one will make a guest appearance next week in Barcelona, Spain 🇪🇸 - details to be announced soon!
Last month, Café Gallardo's Nuguo Geisha Washed clinched 3rd place in the 'Lavado' process at the 2024 Best of Panama competition with a score of 94.63 SCA points. The award is a testament to the innovation and hard work the Gallardo family puts into each harvest year after year. Pocho Gallardo’s background as a civil engineer has helped them become one of the top coffee producers globally. We hope you get to try its sister lot, expertly roasted in Hong Kong by Craft Coffee Roaster.

Hot off the drum: Chevas Geisha Washed Choclo Lot #07 11
Our second batch of Chevas Coffee Estate's 2023-24 harvest just hit our virtual shelves. An absolute must-try, it has a flavour profile of Ginger lily, Bergamot, and Peach.
Harvested in The Choclo of Chevas Estate. The best cherries were hand-selected, pulped and washed for three days. Then, dried in a cold room for 8 days and strained in the dark room. This process yields a very clean and floral cup. Give it a try!
Thank you for all the positive reviews. Your feedback inspires us to strive for excellence 🫰

🍾Congratulations to all the winning producers of the Best of Panama 2024! Special shout out to and family for achieving 3rd in the Geisha Washed category and 1st in Varietals! Keep up the amazing work!
This Geisha Natural Anaerobic lot comes from the private reserve of Carlos Aguilera Franceschi (former owners and current administrators of Finca Carmen). Independently managed, the 10-hectare private lot continues the legacy of the Franceschi family who established Finca Carmen back in 1950 by Efraín and Carmen Franceschi, who started cultivating arabica varietals in 1960.
This private lot underwent a process that Carlos refers to as "LPC” (Long Play Coffee): a 36-hour anaerobic fermentation in steel tanks at a regulated temperature of 25 degrees Celsius. It was then slowly dried on African beds over twenty days and finally dried in a dark room.
It has a subtle flavour profile of orange blossom, oolong tea, and stone fruit which intensifies as it cools.
Yum! 🍇💐🍍🥭💜🧡
The initial Chevas family farm was established by Luis Victor Chevas in the Alto Chiquero region of Boquete, back in the 1970s. At first, the farm was dedicated to large-scale agricultural production, mostly of potatoes and onions. Later, two other farms were added in El Salto and Alto Quiel, each boasting distinctive microclimates and fertile, organic-rich soils. These farms, with elevations ranging from 1,500 to 1,750 m.a.s.l. enabled diverse coffee plants to thrive. It wasn’t until 1996 that Luis Victor decided to focus on coffee production. The estate is now at the helm of third generation José Luis Chevas who, together with Adrian Villarreal, the 2020 Panama Barista Champion, experiment and develop unique cup profiles.
Chevas Coffee Estate is known for growing a range of coffee varieties, including Caturra, Marogogype, Catuai, Typica, and the globally acclaimed Geisha.
Thrilled to share with you this Geisha Natural lot from Chevas Coffee Estate. It's a riot of fruity flavours starting with Kyoho grapes, Floral, Bubble gum, and Tropical fruit.
was established in 2016 by José Luis Chevas who embarked on his journey in the coffee production world at the age of 18, following in his grandfather’s footsteps. José Luis had the idea of bringing the coffee producer and baristas together to experiment and develop unique cup profiles. Thus in 2016 José Luis partnered with Adrian Villarreal, the 2020 Panama Barista Champion, and in a very short time, they have produced unique and complex lots that have attracted the attention of world champions and international competitors.

Carlos Aguilera Franceschi's 10-hectare private lot is located in an area known as "Los Pozos", named after the hot springs found there. Situated at an altitude of 1,800 meters above sea level in the valley known as Valle del Volcán. This valley – rich with black volcanic soil and with a unique microclimate – follows the river Chiriquí Viejo on its course to the Pacific Ocean.
Carlos shared with us his unique process for his Geisha Washed Anaerobic lot, which he calls LPC or Long Play Coffee “After the beans are washed and the peel, or 'cáscara' in Spanish, is removed, they undergo a 48-hour anaerobic fermentation in temperature-regulated steel tanks at 25 degrees Celsius. The beans are then slowly dried on African beds over a period of six days and finish drying in a dark room.”
