什麼是熟成牛扒，是一種透過溫度、濕度、時間，讓食材質地轉換的方法。
熟成後的牛排，除了肌肉從原本的緊繃變的放鬆之外，還會因為牛排本身的天然酵素與微生物，讓蛋白質轉換成氨基酸，讓牛排肌肉組織變的更軟嫩，脂肪更佳均勻、味道也會更加濃郁和多汁性。
再熟成過程中，會讓牛排在表面會生成一層類似金華火腿般的硬皮，烹煮前必須要去除，至少會損失10～20%
