Tipzzy 的出現主要是想將結合了「科學」和 「藝術」的葡萄酒以更有趣和愉?
大家可有想過原來在比較冷的產區,釀酒師會適量地加入未發酵的葡萄汁(Rectified Concentrated Grape Must) 來彌補葡萄因為氣溫太低而未能完全熟成。
葡萄汁需要在發酵過程消耗糖分來轉換成為酒精。如糖分不足,會直接影響了酒精的生成,讓葡萄酒無法達到一定程度的平衡,因為太高的酸度會使酒的味道變得太尖銳,缺乏層次和單調。
Hello ! Do you know in cooler climates, winemakers might add “sugar” before, during or after the fermentation? I know what you are thinking- “sugar” ???
No worries, this sugar is Rectified Concentrated Grape Must which normally extract from the same grape variety. Wine needs sugar to increase the level of alcohol, cooler climates might struggle of grape ripening. Adding RCGM will help the final wine to contain more sugar available for yeast to turn to alcohol and carry out the enrichment.

Xarel lo is a white grape variety of Spanish origin specially grown in Catalonia. It is also the backbone of Spanish sparkling wine (Cava) and often blends with other grape varieties. The aromas are of citrus, floral, fennel and mineral, with high acidity and sugar while it is ripened, it provides a great ageing potential to Cava and has attracted many wineries to produce high quality with ageing potential white wine with 100% Xarel-lo.
Due to its high acidity, rich floral and fruity aromas, Xarel lo is very versatile in food pairings. From refreshing salads, cold dishes, seafood, to chicken or duck, they are all excellent and it is perfect as a must-have house wine for your daily drinking.

It allows the grapes to get full exposure to sunlight, and sunlight is needed for successful flowering and fruit set during the grape growing process, which will directly affect the grape harvest. Pinot Noir is one of the seven major grape varieties, which can produce the most popular light-bodied red wine in the world. Home of the most prestigious Pinot Noir is French Burgundy - Côte-d' Or. High acidity, low tannins, extraordinary fruity & floral aromas with long and smooth finish make it distinct from other grape varieties.
Pinot Noir is susceptible to diseases and has high requirements on growing environments. It is an early-ripening grape and is suitable for cooler climates. Here are the Tipzzy tips : through yeast and lees contract during the wine making process of traditional method sparkling wine, glutamic acid has been generated and added Unami favour to the wine; while oyster are rich of nucleotides, and when you have both of it at the same time, they will produce a "umami synergy" which creates a bomb of freshness in your mouth !

Chardonnay (夏多內) - 是目前全世界種植最廣泛的白釀酒葡萄,由於被廣泛種植所以可以釀製成的酒體風格亦相比其他品種較多。由清澈明亮的白中白氣泡酒到綿密豐腴的木桶陳年白酒皆可釀製而成。
由於生命力和適應力強,Chardonnay 在冷涼、溫和到炎熱的地區都能發展出不同的風格。在氣溫偏低的產區,Chardonnay的風味會越偏向綠色水果,像是青檸檬、青蘋果、榅悖;越接近溫暖的氣候,風味會越偏向熱帶水果,像是楊桃、黃蘋果甚至是鳳梨。

Chardonnay is the most widely planted white grape variety and with this in mind, it is made in a wide range of styles from lithe & austere to creamy & rich white wine aged in oak.
In cool climates, Chardonnay will have noticeable acidity and flavors of green plum, apple, and pear when it is closer to a warmer location the flavors become more citrus, peach, and melon, while in very warm locations it can develop the sense of fig & tropical fruit notes such as banana and mango.
Serving tips: you don’t need to decant it and please keep the serving tempter at 7-13℃ to enjoy the uniqueness & craftsmanship winemakers have put in the bottle !
大家可能會懷疑在機械這麼方便的世代, 為什麼有一些酒廠還堅持使用成本較高的人手採摘來收割葡萄? 主要的原因是要確保釀葡萄酒的品質。使用人手採摘時,農物會只會篩選已符合熟成條件的葡萄,有部分葡萄因為環境的影響,未必能在預定的收割時間熟成而未能發展出充沛的果香,人手採摘就可以避免未成熟的葡萄混進釀製同發酵的過程,從而影響了葡萄的風味。
由於人手採摘可以有效保留葡萄的原風味,大家不難發現很多出色的葡萄酒都會採用此方式進行收割,有些產區(例如: Champagne, Beaujolais, Rioja, Rive,等) 更禁止使用機械收割以釀造出高品質的葡萄酒!

Hand-picking is preferred for wine grapes / small vineyards that want to fully extract & keep the fruitiness during the wine making progress. Why ?
The farmer will only pick grapes that’s healthy enough and allows individual bunch selection based on ripeness so the fruit selection can be more concentrated. Since fruitiness is one of key parts to identify if the wine is worth to develop / to be aged, it won’t be hard to find out that mechanical harvesting are banned at some of the top wine regions like Champagne, Beaujolais, Rioja, Rive, etc. to produce high quality wine !

卡本內蘇維濃源自波爾多,是Cabernet Franc 和 Sauvignon Blanc 自然同種交配而來,風味集中濃郁,單寧含量高,適合久存!

最著名當然是來自波爾多產區的混調紅酒,由於單寧較高適合配以濃郁的紅肉飲用,而且需要大約60分鐘以上的醒酒時間,才可讓酒中的風味盡現。
We can’t make wine without grapes ! It is the most important ingredient that set the style and character of wine ! Moving forwards, we will be sharing some basic information about grape varieties with our , hope this will be helpful for you guys to discover your beloved bottles !
Let’s start with the world’s most popular grape - Cabernet Sauvignon ! It’s a natural cross between Cabernet Franc and Sauvignon Blanc. It’s originated in Bordeaux and worth for ageing due to the high tannin and rich of flavour !
Flavours and Aromas : Black Fruit ,Black Currant, Blackberry, Cedar Wood, Spices, Herbaceous
It is famous in Bordeaux with blending with Merlot, Cabernet Franc, Carmenere, etc. With high tannin in character it goes so well with rich grilled red meats and dishes with high flavour, remember to reserve enough time for it to decant before drink ( at least 60 mins ) - it helps to soften the tannin and better express the aromas and flavour !
葡萄是釀製葡萄酒的主要成份,你可曾想過原來由果皮到果肉都是釀酒的珍貴成份而且缺一不可!
果皮蘊含葡萄的風格、顏色、單寧和其品種的獨特果香,在釀酒的時候釀酒師都會盡力保留其原始風味,確保可在之後的發酵過程中為酒體增添架構;果肉則提供了水份、甜味和酸度為酵母準備充足的養份,在發酵的過程裡轉化成為酒精。
另外,圖中灰灰一層充滿光澤的表面,其實蘊含了豐富的天然酵母,有些專門釀製細緻柔和風格的酒廠更會連葡萄梗一起整串發酵來增添單寧和架構!
Fun fact about wine grapes : every part of it plays a very big role on wine making process. From skins, seeds, stems to pulp they all provide everything that set its style & character.
Skin - contain high concentration of flavour compounds, color and tannins which give each grape its signature varietal character
Seed and steam - contain tannins , yes, it’s tannins again ! It’s good for anti-ageing ( so drink more ). Some of the winery will also use the entire grape (includes steam)to produce delicate wines !
Pulp - contain water , acids and sugar ! It provides all of the nutrients for the yeast to make alcohol during the fermentation process !
And the waxy surface that you see in this photo is the bloom that contains yeast and can be used to ferment the wine !
