最近見到一間我有 follow嘅觀塘IG 3D cake蛋糕店做到 10月底就結業。勾起咗我以前餅店結業時嘅好多畫面。
當時餅店開始轉型,價錢 set 返高啲,等我哋可以做返少d (數量)以高質同合理收費嘅蛋糕維持生計,就可以多返少少時間休息。因為長遠落去,如果繼續薄利多銷嘅方法會犧牲咗我嘅健康,餅店就唔會繼續到了。
正當餅店開始有起色嘅時候,新業主要求我打通埋旁邊嘅舖位,租金當然要上調。上調嘅新租金係第一份租約嘅四倍。所以最後我哋喺 2016年9月結業。原因係市道太好,業主唔怕無人接租而開天殺價。
反觀依家,好多店鋪,好多餐廳,好多我嘅同行都喺呢個大環境下掙扎,無生意,維持唔到生計而選擇結業。The struggle is real! 大量肯消費嘅移民外國。留港嘅人,好多都想喺呢段時間慳多d洗少d。當然仲有更多更多既原因啦!
雖然當刻心情好似世界末日咁,但其實咁多年之後望返轉頭,先知道我得到嘅嘢遠超過失去咗嘅,所以都係賺咗了吧!
希望仲為自己夢想進發嘅大家加個大油!

各位偉大嘅母親!母親節快樂!
剛剛開始唧花嘅時候,會搞亂 Poppy (罌粟花) 同埋 Anemone (銀蓮花)。 搞得亂,就梗係因為佢哋兩個其實好似樣。
不過佢地好似,但係唧花嘅時候其實都有好大分別架!銀蓮花係一個高身嘅花瓣,有少少似葵扇咁。而罌粟花花瓣就較闊,而且好多皺摺。佢地嘅雄蕊雌蕊都好唔一樣架!大家唧花嘅時候要留意啦!
I absolutely love Poppy and Anemone flowers since I started making wafer paper flowers! Even though they may appear similar, they belong to different flower groups and require unique piping techniques with buttercream. When I first began piping flowers, I confused the two. Anemone petals are slightly elongated and oval-shaped, while Poppy petals are broader and more ruffled.

記住唔好痴住第一個花瓣開始唧第二個花瓣,而係喺旁邊唧 (好似個太陽咁樣),加埋中間留白一個圈圈,咁就得架啦!

初初學唧花嘅時候,覺得最難嘅地方就係點樣令到個花型飄逸,點樣加多d花瓣,多得嚟又唔係死實實,又唔會將一個五瓣花變到好似菊花咁樣。但到底點樣加呢?睇 Youtube 片好多都係隨心加。但因為我係一個需要有規律嘅人,所以要先學一個規律性嘅方法,先可以延續做隨心嘅方法。
練習用呢兩個方法,熟習之後,就可以慢慢做變化架啦!

2013 年第一次幫人做外判蛋糕,佢接咗張唧花玫瑰花束蛋糕。從來無接觸過唧花嘅我驚咗好耐。一路上網搵資料,當時 youtube 無乜唧花嘅教學短片,所以我就去咗 wilton 搵 references。嗰時做忌廉蛋糕,其實練習唧玫瑰花係極度困難,餅房開冷氣開到好似殮房咁樣,全個過程係要同時間競賽,包cream喺我太陽之手嘅協助下,長期起泡泡同埋溶。當時又無夾嘴呢樣嘢,所以唧出嚟嘅玫瑰花肥嘟嘟,無時間慢慢嚟。連續練習咗一兩個禮拜之後,就正式出貨了。雖然接到好多張單亦都出咗好多貨,蛋糕係靚嘅,但都未係我心目中想要嘅嘢。
幾年之後,我再開始唧花,用鮮忌廉,奶油,大豆蠟唧出嚟嘅花比以前靚咗好多,但係佢哋多數都係肥嘟嘟。直到有一日我發現原來唧嘴係可以夾薄㗎!🫨🫨🫨從此之後就改變咗我唧花嘅journey,令到做出嚟嘅嘢,更真實更自然,自己睇到都開心d!

When I piped my very first rose around 2013-2014, I followed different tutorials online (which was not easy to find back then). It was a race between whether I can pipe the flower pretty, or let the cream melt in my hand. Didn’t know better back then, I would quickly pipe all my flowers in order to complete a cake order. It’s not ugly for sure, but it wasn’t what I wanted. The flowers looked bulky and not natural!
Fast forward to 2020, when I picked up flower piping once again! This time I feel like I am better equipped! Experimenting with whipping cream, buttercream or soy wax made my roses look a lot better, but I was still not satisfied with the bulkiness, until I discovered that I could adjust my piping tips to produce the thin petals I desired!
So here I wanna show you my work before and after tuning my piping tips! =). Top two are piped out of pastry topping. Lower left is soy wax, and lower right is piped with italian meringue buttercream.

I loved sunflower since I was a little kid! But arranging it onto a cupcake maybe a bit challenging.
One thing most people struggle with (including me when I first started, well, I still do sometimes) is actually assembling the flowers onto the cake / cupcake. Since you only have limited space to decorate your cupcake, crunching in large flowers may be a difficult task! Great thing is, you could always freeze it, cut it up, or even use broken pieces to fill in smaller gaps to make a beautiful arrangement, lastly, add flower buds and leaves to cover up unwanted space!

✨ Lessons Learned: Mica and Candles ✨
After showcasing the video of the test burn for candles with mica, allow me to present a snapshot of the process for you to analyze the flame and burn performance. The still picture indicates that the candle containing mica produces a diminutive flame that eventually extinguished during the test. This demonstrates how mica might block your candle wick. Consequently, it is advisable to utilize mica in candles solely for those used beneath a candle lamp or for creating wax melts!

點樣拯救呢個蠟燭記憶隧道?
用一張錫紙包住蠟燭容器頂部,上面稍微整窄少少。燃燒蠟燭至液態蠟燭去到容器邊邊位置先好滅火。
日後點蠟燭嘅時候,記得唔好心急吹熄佢啦!等蠟燭溶到整個面都變為液態先滅火,成個蠟燭就可以燒到底部架啦!
Simply add a piece of aluminum foil around the top of the candle container, make the top part slightly smaller, so the heat trapped around the foil could help melt the candle that’s around the sides, and your candle should go back to a flat top.
Do make sure to burn your candle to a full melt pool before extinguishing it to avoid tunneling again!

近日因為一d事情,終於令我醒覺,人生唔在乎長短,但就要搵到自己既purpose同快樂,先要錫自己。所以的起心肝,搵返 d Quality of life。 除左重拾自己以往對食物既 passion,更對戶外活動既熱愛同埋生活上講究既細節。食好d,玩開心d,用好d。做返一個不枉此生既人!
