TROPICAL CHEESECAKE 🥭🍍
Fresh mango, a crunchy biscuit base, and smooth cream cheese - perfect light summer dessert I promise you will love! 🤭🍰🍮

INSTRUCTIONS
1️⃣ Put the biscuit crumbs into a bowl and pour over the melted butter, stir well to combine then tip into your prepared 8-inch (21 cm) cake ring.
2️⃣ Press the mixture down well with the back of a spoon to form a compressed layer.
3️⃣ Bake in the preheated oven for 10 mins at 180C.
4️⃣ In another bowl whisk together the remaining cheesecake ingredients until smooth.
5️⃣ Pour onto the biscuit base then scatter over the mango pieces.
6️⃣ Bake for 1hr then prop the oven door open and leave to cool for a further 30 mins.
7️⃣ Once cold, chill the whole cheesecake in the fridge overnight.
8️⃣ Decorate with pineapple and mint leaves.

✔️ 1 ¼ cup ground Gran Cereale biscuits (130 g)
✔️ ¼ cup melted butter (60 g)
✔️ 1 cup cream cheese (270 g)
✔️ ⅓ cup caster sugar (65 g)
✔️ 2 tbs flour (20 g)
✔️ 1 egg
✔️ Lime zest
✔️ ¼ cup heavy cream (65 ml)
✔️ ¾ cup sliced mango (120 g)
