This cocktail is a homage to our wonderfully wacky neighbors to the Whest. We wanted to create a drink that does justice to their unique outlook, infectious energy and represents their land and particularly sea while using ingredients from this magical Kingdom. In our research we came across "The Biddies", a fascinating ancient tradition still going on today.

@dingledistillery award winning Vodka was an obvious choice as a base spirit, it's distilled on the Western edge of Europe in a beautiful hand beaten copper still, affectionately known as Oisin. They're an amazing brand run by a bunch of absolute legends.

Our next stop was Valentia Island, home to one of the more romantic love stories in the Irish drinks Industry. Anna and Orla were sick of the rat race so in 2018 they had the masterplan to sell up their lives, move to Valentia Island off the Kerry coast and make Irelands first vermouth, @valentiaislandvermouth. Locally foraged island plants and herbs including gorse are among the 20 different botanicals that go into every bottle of vermouth. It’s ridiculously tasty and their love for each other and their craft is seriously infectious.

South again down the Wild Atlantic way to Derrynane you'll find John and Kerryann, the husband and wife team behind @atlanticirishseaweed. They've been running courses and workshops since 2009 and consider themselves educators and custodians of the marine habitat with a passionate ethos to respect, enjoy and protect the natural wonders that surround them. They sent us numerous samples to play with included aged seaweed and coastal plants, we settled on Pepper Dulse, often referred to as "The truffle of the sea", for its huge minerality and umami elements.

Everything is shaken with a scoop of Champagne sorbet then hit with a touch of Poachers soda. It's light and fluffy like a bougie, boozy cream soda and once our Spring menu kicks in, you're never going to see it again, so grab it while you

You know those couples that were friends for years before finally hooking up, much to the relief of their pals? This feels a bit like that 😂.
