Usually we would encourage you to celebrate an occasion with your favourite neat dram, however the Oráiste cocktail from 34 Mayfair is one of few exceptions to this.
Curated by Bar Manager Axel, this cocktail shines a light on The Donn whiskey, featuring just 3 ingredients, there is nothing to distract guests from what is happening in the glass.

Our obsidian Whiskey Stones are a sophisticated alternative to ice, keeping your whiskey chilled without dilution 🥃
As obsidian itself is impermeable, the stones will not absorb any flavours meaning nothing will be released into the whiskey and alter the exquisite taste. Not only this, but obsidian keeps whiskey chilled without dropping below 15 degrees Celsius, the temperature when whiskey will begin to lose depth of flavour.

Unlike other whiskeys, we give ours more room to breathe...
In traditional whiskey-making processes, barrels are filled to the brim and whilst we respect tradition, we do things a little differently.
By underfilling our barrels, the magic of oxidation happens far quicker than if they were full - maturation starts from day one. This allows for far deeper flavour profiles and a smoother, velvety texture compared to a barrel filled to the brim 🥃

Through our unique crafting methods, The Devil’s Keep 2023 Edition is a creation of cask mastery. Journeying through Bourbon-soaked American Oak, Tawny Port, Pedro Ximenez Sherry barrels, and finally, deep stave toasted Hungarian Virgin Oak casks.
As a result, this whiskey unveils an exquisite blend of flavours and intricate layers of depth. On the palate, tastes of vanilla, caramel, and toasted sugar are amplified by the warm, smoky essence of toasted oak, followed by dark chocolate and a wisp of campfire smoke, for a velvety, rich finish 🥃

At the celebrations, we treated guests to our rare and ultra rare Irish single malts, including The Devil’s Keep, The Taoscán, and The Donn, serving perfect serve neat pours alongside a selection of cocktails created by our inhouse mixologists.

While we respect tradition, we are not bound by convention.
Traditionally barrels are filled to the brim, but we weren’t convinced that this was the best method. Filling the barrel to the top requires the distiller to wait a few years for enough space to be created through evaporation before oxidation can take place.
By under-filling our barrels, oxidation and maturation begins from day one. It may be the most costly technique, but the resulting complexity, smoothness, viscosity and extraordinary depth of flavour is one that cannot be denied.
