#INVITE Have you stayed in the Westport Coast Hotel & Asgard Apartments? 🩵 I lived & worked in Westport many moons ago and still have great friends there, so when I was asked to come stay in the Westport Coast Hotel, I jumped at the opportunity. 🩵 Located out the quays, It’s the only waterfront hotel in town and sits on the doorstep of Westport House, and they recently refurbished their front facing balcony rooms and the rooftop restaurant, LuSeas. 🩵 We popped down to Spa Veda for a relaxing & rejuvenating seaweed bath before we headed to LuSeas for dinner. The menu showcases lots of local suppliers, and the quality of food was superb. (When you stay, you need to have the chowder, its next level) 🩵 The restaurant is bright, airy, and full of life, boasting some of the most beautiful views of Croagh Patrick I’ve seen. 🩵 If you’re planning a trip West, pop the Westport Coast Hotel to the top of your list. 🩵

Have you heard the news? Bonne Maman Ireland has launched the most delicious creamy Peanut spread. It can be used in so many ways, for breakfast, lunch or even dinner! Today I want to show you how to use it to make these delicious peanut cookie sandwiches. Makes 16 cookies (8 sandwiches) Prep: 25 mins Bake: 15 mins Cookie batter 115g butter 100g caster sugar 100g brown sugar 125g Bonne Maman Peanut Spread 1 medium egg 180g plain flour Pinch mixed spice 1/2 tsp baking powder Pinch salt 1 tsp bread soda Peanut buttercream 240g soft butter 125g Bonne Maman Peanut Spread 120g icing sugar Filling 50g salted peanuts Method For the cookie dough, in a mixing bowl, cream the butter & sugars until smooth. To this add the egg and peanut spread, mix. Add the flour, baking powder, bread soda, mixed spice and salt and mix until smooth. Cover and chill the cookie batter for 35 minutes. Once rested, line three trays with parchment paper. Preheat your oven to 190C/170C fan. Divide dough into 16 balls and place on the prepared trays. Allow room as they will spread during baking. Flatten slightly and place into the preheated oven and bake for 14-15 minutes. Once baked, allow to cool on the trays for 5 minutes before popping them onto a wire rack to cool completely For the buttercream, in a mixing bowl, cream the butter, icing sugar and peanut spread until smooth and velvety. Spoon the peanut buttercream into a piping bag fitted with a star nozzle. Turn 8 cooled cookies upside down and pipe a buttercream circle onto the centre each. Sprinkle on some peanuts and place the remaining 8 cookies on top to create a sandwich. Pop into the fridge to firm up for 10 minutes before tucking in. Top Tip: Add a spoon of Bonne Maman Strawberry Conserve to the centre to make peanut butter & jelly cookie sandwiches. #Ad #bonnemaman

This blueberry tart has a gorgeous crisp pastry and is loaded with fresh blueberries, Gem crystalised ginger, and mixed spice. Wow wow wow, where to begin? Such a fantastic evening decorating/painting cakes in Edition Cafe Brown Thomas yesterday. ❤ We could not have had a nicer bunch of people at the class and there were plenty of laughs and lots of star bakers! ❤️ Goes without saying, a massive thank you to Domini & Peaches Kemp & the team for all their support in making tonight happen.
