No-bake cinnamon rolls made with Semper Glutenfritt gluten-free porridge oats!
RECIPE:
100 g dates
1 dl coconut cream
1 cream vanilla powder
1 ml salt
0.5 teaspoon cardamom
1 teaspoon cinnamon
3.5 dl gluten-free oatmeal
2 tablespoons water
Filling:
100 g dates
1 dl coconut cream
1.5 teaspoons cinnamon
1 cream vanilla powder
Measure out all the ingredients for the dough and mix in a food processor. Set the dough in the refrigerator while you make the filling.
Add the filling ingredients into a mixing bowl and mix smoothly with a hand mixer.
Remove dough from the fridge and roll out thinly (approx. 5 mm). Spread filling evenly over the dough, leaving about 2 cm on one side of the dough. Roll up into a tight roll (finishing on the side without filling) and wrap the roll in parchment paper or plastic wrap.
Let the roll solidify in the fridge for about an hour. Then cut into reasonably large pieces. Store in the refrigerator for about 4 days or in the freezer.

Liberto black bean fettuccine in a vegan spinach pesto.
INGREDIENTS
- 1 packet Liberto black bean fettuccine
- 2 garlic cloves
- 100ml almonds
- 180g fresh spinach
- Juice from 1 lemon
- 50ml extra virgin olive oil
- Salt and pepper

METHOD
- Heat a splash of oil in a pan (sunflower or any other cooking oil)
- Clean the garlic and chop roughly and add to the hot oil with the almonds, roast on medium heat for about 5 minutes (I like my garlic quite brown for this, adds a bit of bitterness and a bite)
- Transfer to a food processor and add spinach, lemon juice and olive oil and blend until smooth
- Add some salt and pepper for taste
- Enjoy!
