Packing a punch into salads. Make salads more nutritionally dense by adding in lentils for protein, B vits, Vit K, iron, zinc, fibre & other vital grace minerals. Here I added wilted spinach feta, cucumber & feta in a lovely garlicy sweet vinaigrette (I used a good dollop of pomegranate molasses). Great with bbq fish or meat or solo.

Exam week… nerves slightly fraught here … but what can we do … we can’t sit the exams for them … ! However we can fuel them as much as possible with nutritious slow release energy to keep the brains going! Healthy fats, oats, nuts, seeds. Mini break in the sun with your bestie … nothing beats it. ☀️☀️A chance to pause, catch up on many many months of news, reset yourself, unwind & really savour the moments. Feeling so lucky to have had a few days, especially after the past few years it feels extra special & everything so much more appreciated. I enjoyed so many varieties of healthy food & vibrant colours and flavours. No need to reach for the wrong things while on hols, save yourself for the odd cocktail or two! 🤩 It’s all about the balance & the enjoyment & the endless belly laughs. Letting your parasympathetic nervous system operate for a change!
Pancakes can be healthy! Try steer clear of the fluffy white American style pancake made with refined flour & sugar. It’s like eating dessert for breakfast & will only spike your sugars & leave you feeling tired & hungry soon after. Here I ground down buckwheat into flour & made healthy gluten free pancakes sweetened by bananas & a little vanilla essence. Filling ! And addition of live yogurt is a good source of fat & protein as well as seeds for healthy fats & whole fruit for the fibre. These will fuel our Saturday we just need storm Eunice to calm her jets a little so we can get out & walk!

Mushrooms… full of Vit D, many B vits, selenium & beneficial compounds that can contribute to a healthy gut. Did you know if you leave your mushies sitting out for even 20 mins in a sunny spot, this will increase the Vit D levels. Delicious in soups (as shown) or chopped into slow cooked casseroles, stews, omelettes, roasted or sautéed. I simply chopped mine down (2 punnets, added water, a little milk, stock cube, some full fat cream & parsley. Cooked & blended as always to perfection in
Asian chopped salad. Using beautiful kale in season, as well as red cabbage. Choose what to add - I used carrots, spring onions & a few lone radishes! Can also use any colour pepper & veg like courgettes or sprouts or broccoli. All raw and fresh. Chopped down .
The dressing brings this to another level
- garlic, ginger. Honey, brown rice vinegar, sesame oils, olive oil, soy sauce & a pinch of dried chillies. Save In a jar in fridge separate to salad to keep salad fresh for longer.
To assemble scatter over some nuts of choice (unsalted), sesame seeds & drizzle the dressing.

Keeping it very simple … nothing beats good old potato soup. Followed instructions as she made this in a jiffy on her thermomix. I added in a lone sweet potato I didn’t know what to do with!
Beetroot juice … or vampires blood?! Either way the kids got stuck in. Lovely beets from , celery, oranges, lemon & carrot. The beets are so sweet & Thermomix blends everything so not a bit of the fibre is lost. A few benefits of beetroot

- high in minerals namely silica which helps absorb calcium. Therefore helps prevent osteoporosis and brittle bones
- high dietary fibre content, great for keeping one regular, as well as managing healthy cholesterol levels
In fact, there are so many benefits I am going to make an effort to consume every other day, roasted, boiled, raw in salads or juiced. It’s so versatile and tasty.

Comfort food… with all the negative media around us lately, was happy to get my gang home from school! Churned put this really healthy hidden veg cottage pie, lots of veggies - garlic, onions, celery, carrots, tomatoes, peppers & fresh basil. 3 second chop, sauté & simmered with the beef. Lots of great organic veggies from - just scrubbed not peeled for extra goodness. As the plates were scraped I gave myself an internal high five! Especially because of ‘the fussy one’ clearing the plate!

It’s a green kinda day… all home schooling again from home with Storm Barra doing his thing outside. It’s a day to keep warm & eat nourishing food. Whipped up this great soup in minutes in . I had some mint (half bag/10g) a bag of frozen peas (500g), 1 onion & k**b of butter + stock. Season. Delicious 😋

Happy Sunday everyone☀️Taking a few extra moments this morning to have a mindful breakfast. Chewing each mouthful as much as possible before swallowing & savouring all the tastes and flavours. This is a low carb breakfast that will keep me fuelled for hours, bypassing any need for snacks. Healthy fats like salmon & eggs take longer to digest and will keep me feeling full. After a busy week this is my treat. 😍 No sprinting around this morning. We owe ourselves these little pauses in life.
Lovey creamy smooth spiced sweet potato soup, with red lentils, onions, ginger, garlic, stock & coconut milk. Thermomix whipped it up in no time to, chopping in seconds, sautéing, cooking, stirring & a final blend at the end for that restaurant style texture. Ready for school flasks tomorrow.
Super fast tray bake dinner tonight … organic chicken thighs, chorizo, red onion, carrots, leeks, spuds. Season. Olive oil. Zest of orange. Squeezed the orange juice over too. Roast for 40-50 mins. Plate up & enjoy. Can use any veg of your choice.
Banana bread. Very ripe bananas were winking at me! Dug out old favourite recipe from book - banana breakfast loaf & used manual mode in my Thermomix to@whip it up in a jiffy. Free from refined sugar & refined flour, this is a lovely gluten free loaf.
🍌4 ripe bananas
🍌20g pecans or walnuts
🍌 150g ground almonds
🍌 125g buckwheat flour
🍌1 tsp baking powder
🍌 1 tsp bicarbonate
🍌 2 tsp ground cinnamon
🍌 pinch salt
🍌 50g maple syrup
🍌55 ml chickpea water
🍌2tsp apple cider vinegar
Busy day tomorrow I know I need some go-to healthy refuel snacks. Made these nut/date/whey protein energy bombs. Nothing else added except 1tbsp maple syrup, Thermomix worked it’s magic chopping everything down in a few seconds, added 1 scoop protein powder & the syrup, mix and roll. Into the fridge & sorted! High in natural fats & protein, tons of fibre, slow release energy.
Slow cooked beef stew. Piling in the veggies - leeks, onions, garlic, carrots, parsnips, celery, mushrooms. Lovely beef from from made in my Thermomix- great nourishing food for this time of year.

Was waiting till the weather got a bit nippy to try this out! Comforting nourishing and nutritious are three words to describe! Kale, sweet potato & bean stew. The kale is beautifully in season from filling me with Vit A, B vits, K, C, many trace minerals and essential minerals such as iron, calcium, iodine, zinc. The sweet potato & beans are great source of fibre all in all this packs a punch & keeps me fuelled.
- 1 garlic clove
- 100g onions
- fresh thyme leaves
- 35g Olive oil
- salt & pepper
- 250g sweet potato / squash
- 150g kale shredded stalk removed
- 2x tin of beans ( I used pinto)
- sundried tomatoes (8 sliced)
- stock
- 1tbsp cumin
- 1 tsp cinnamon & ground coriander
- 1/2 tsp turmeric
🎃 cook pinion, garlic, thyme, squash, s&p, oil - 10 mins stirring
🎃 add beans, tomatoes, spices & stir in
🎃 add stock (800g boiling water) & simmer for 20 mins
🎃 add ground coriander & kale & cook 4 mins.
Gorgeous energy bars … modelled mainly on the recipe by from Fuel Food cookbook. Made them so quickly in my Thermomix- great for after school snack or elevenses with a cuppa. I added in a few extra bits like apricots, hazelnuts & sesame seeds. Full of fibre & healthy fats & protein keeping you full for longer. Low in natural sugar = no sugar spikes or energy slumps. I had forgotten how yummy they are! Broadly speaking recipe is
210g oats
80g blueberries
180g nuts of choice
90g seeds of choice
90g apple sauce (I stewed 2 apples in a little water & mashed together)
80 honey/ maple
225g nut butter
Simply mix dry together, add wet & spread into baking tray. Put into freezer for an hour remove & cut into bars. Store in a ziplock bag in the freezer. They are really delicious!
The most stunning vegetable ever! Is it a broccoli or a cauliflower? It’s a hybrid of both! My favourite way to eat this beautiful Romanesco from is cut into florets, toss in olive oil, lots & lots of crushed garlic, seasoning & zest of lemon. Roast for 20 mins. Just had it this evening cold in a salad with lovely prawns & spinach. Lovely hot or cold, raw or cooked. Packed full of vitamins & minerals namely A, B, C & K. Helps fight off free radicals & boost immunity it’s no wonder that nature provides us what we need this time of year, especially in these virus-laden times! I urge you to try it!
Beautiful silky curried parsnip soup. Eating with the seasons & using up my lovely organic parsnips to make a really simple & delicious soup. Onions, parsnips, curry powder, butter or oil, stock, cook, blend enjoy. It’s that simple. No cream added but you would think there was by the taste.
Parsnips being a root veg, are full of nutrients and a really good source of complex carbohydrates as they are a great source of insoluble & soluble fibre. Fibre is essential to help maintain healthy cholesterol levels & healthy gut & digestion. Parsnips contain lots of phytonutrients, minerals (such as iron, copper, manganese) and vitamins such as Vit C). Sweet & nutty in flavour kids should love them too.
